Also European Chefs are very long. To get a good working triangle between the board and the knife blade, I have to take a very long knife. And for a long knife you need a spacious board. I have all small ones, only 25x40. ((You just can't turn with a big knife. But maybe someday I'll buy a large one, then I'll think about the knife.
