Cake in the cradle

Ingredients

Dacquoise:
Sugar 100 g
Walnuts 30 g
bitter chocolate 30 g
Protein 2 pcs
Vanilla
Cake:
Egg 1 PC.
Sour cream 50 g
Vanilla
Wheat flour 100 g
Sugar 100 g
Baking powder 1/4 tsp
Soda 1/4 tsp
Salt pinch
Room temperature butter 60 g

Cooking method

  • This cake is really just delicious - soft, tender, aromatic in a nutty crunchy shell, named beautifully and poetically - the cradle! Definitely one of the best cake recipes.
  • It is better to use a silicone rectangular shape here.
  • Dacquoise:
  • Cake in the cradle Pre-fry the nuts in the oven at 180C for 10 minutes. Cool completely. Chop the chocolate into pieces and send it to the freezer for 10 minutes.
  • Cake in the cradleIn a bowl of a food processor with a steel knife, mix the nuts, chocolate and 15 g of sugar. In the pulsation mode, we begin to grind. Then we start the processor in continuous mode, periodically stopping and carefully watching so that the nuts do not release oil and do not get lost in a lump. We need a crumbly and dry mass.
  • Cake in the cradleIn a perfectly clean bowl, beat whites at room temperature with citric acid. We start at medium speed, gradually increasing the speed. When soft peaks are reached, add sugar in 1 tbsp. l. Add vanilla. We are waiting for the emergence of strong and shiny peaks.
  • Cake in the cradleGently add the nut mass to the whipped egg whites.
  • Cake in the cradleWe spread the whipped mass into the mold, completely covering the sides of the mold along the entire height. An even depression is formed in the middle for future dough.
  • Cake:
  • Cake in the cradle In a separate container, mix the liquid ingredients - eggs and half sour cream.
  • Cake in the cradle Sift flour, sugar, salt, baking powder, soda and vanilla into the mixer bowl. We mix.
  • Cake in the cradle Add butter and the other half of sour cream to the dry ingredients. Stir at medium speed for about 2 minutes.
  • Cake in the cradleGradually introduce liquid ingredients with the mixer turned on. Stir for about 1 minute more. The dough should be smooth.
  • Cake in the cradleWe spread our dough in an even layer into the depression. It should be half the height of the pan, as the dough will rise when baking.
  • Cake in the cradle... We bake in an oven preheated to 180C for about 40-50 minutes. We check the readiness with a wooden skewer. It should come out dry from the center of the baking.
  • We take it out of the oven and let it cool completely before removing it from the mold. gently relax the walls and turn the cake upside down on the wire rack.

Olenka, did you do it in Kesh?
Can you add modes for your KM for each cooking stage (time, speed, attachments) to your recipe so that those who have the same machine do not have to select the modes themselves?

I trusted the recipe right away and doubled the portion, my "cradle" came out like an almond cookie, rose notably, but the dacquoise remained in excess, drank with tea, the cake has not yet been tasted, it is cooling!

Olya! And the cupcake with a crust on all sides, how is it possible, after all, you won't wet the dacquoise on top?

The wrapper seems to float on top of the cupcake itself, I did it.Made changes: instead of the usual cane sugar, plus candied fruits in the dough.

It’s not my recipe, but I decided to insert my 20 kopecks, it’s so called. Today I tasted a cupcake, an incomparable taste, perhaps due to sour cream, I don't even know!

Yes, you explained everything correctly. I am only glad for such competent help!
