Fermented tea "Currant Benefit" from black currant leaves and other (page 2)

Elena_Kamch
Radushka, I also cooked this delicious gull! I added a little ivan tea, raspberries, a little rowan and currant 50-60% of the volume. I didn't get much granules, the main thing for me is the taste. It turned out delicious! Well, of course, I'm in a hurry and I'm already tasting it in full. I like I don't have a strong currant aroma (maybe dry fermentation will help), there is such a light currant.
If possible, I will do more (we got used to the grass here and I found out that, it turns out, there are such good currant bushes on the site!) Otherwise, I decided that there was solid willow tea
Radushka
Elena_Kamch, Helen, he won't be strong, don't wait. But still recognizable, right?
Last year I planted a bush of a new variety for myself (I won't say the name, I forgot to write it down). The berries were very large. The variety itself is later than the others (because of this I wanted to start it), but ... the taste of the berries is mediocre. Sour and NOT AROMATIC! But the leaves ... The size of the leaves is amazing! My two palms are near! Only because of the leaves and I will breed it again. Well, the berries, of course, no one is going to throw away either

By the way, this season I tried an old way of protecting currants from aphids. I planted tomatoes around the bushes. The tomatoes did not grow short, as I was promised, but how everything grows with me ... of gigantic growth! Because of the constant stormy winds, I did not tie up the tomatoes, but threw them onto the currant bushes. It turned out that they intertwined. There are no aphids on such bushes AT ALL!

Radushka, I also typed currants and raspberries. Grammulechku apricots and apple trees. The apple tree has a leaf in a terrible state. I tried to pick all the cherries. But I remembered in time that the tea would be cherry.
Radushka, and currant - raspberry with your hands zhamkat, then into rolls and cut?
Radushka
Light, yeah. Hammer and cut!
I tore a pear yesterday. For the first time I was surprised in what a terrible state the wild pear! Cultural in the village street is better!

Radushkabut raspberries are prickly
Radushka
Light, but after freezing, no. Aren't you freezing?

compared to forest blackberries, raspberries are soft

Aren't you freezing?
Radushka, I’m just drying up. Then I will freeze. I am experiencing not enough leaves. There is nothing to weigh.
Radushka
Light, I already feel the approximate weight with my hand. Raspberry light

Radushkawhat an interesting method! Only our tomatoes do not grow in the open field
I drink tea and understand that before the vacation I have to cut off all the currants in order to make more tea. I liked him very much! So light, delicate, fragrant ...
Crimson leaves fell to me here from a friend. I think I'll take them and wind them in half with currants. Well, there will be no granules, and okay, but quickly. I can't zhamkat my hands ..., long ooo ...
Radushka
Elena_KamchI liked raspberries the most. Only there will be no granules, mind you! That is, absolutely! Raspberries, albeit tiny and tender, give, which then crumble, and the currants are completely twisted into dust!
Almost all of our currants are without leaves. Only the tops with the young! Here, I want to breed late varieties. And then for cucumbers I always dry in July for pickling. Otherwise, you will have to buy brooms by autumn. And these brooms are already "biting".
Now I brewed tea from those currant teas that did not fit into my beautiful jars! Oh, and yummy! I don't even know which tastes better? And they haven't stood for a month on dry fermentation!
Yanka
Radushka, about the currant, the question is - do you only make black? Can you white and red?

We brought out our black one - it was a painful one, we were bothered to treat it, well, it was still from daaaaaaavishnyh varieties, maybe some unstable one got caught ... It's a strange thing - while it was, no one needed it, no one collected it as soon as it was taken out - I immediately figured out what to do with her ... We will start again ...
Elena Kadiewa
There is no scent from red and white, at all.
Yanka
I see, Lena, thanks! Then I'll go to my relatives to beg ...
Radushka
TatyanaAnd she disappeared from us about four years ago. ALL! There was some kind of poop. Many have lost their large plantations. Now I'm spreading it in a new way. There are many new varieties now. More or less resistant to sores
lappl1
Radushkadear, thank you! A chic recipe, like all your recipes, however! Clever girl! Thank you, Radushka, for your ideas, for sharing your developments with us. Well, after all, I blew my lips on currants for several years, until I tried to make it with Ivan tea. It turned out gorgeous. Now I should try to make your teas, but it's too late - the currant leaves are all withered. and I don't have a meat grinder yet. But this is not important - what is important is that the currants have finally been rehabilitated. Eh ... I'll turn around next year. Just ask for someone for the leaves. I have very little of mine. But nothing, in a year I will find where to pick the leaves.
Radushka
lappl1, Lyudochka, breed yours! I used to suffer when the harvest is small, but now ... the leaves are there and great! I'm not in a hurry to uproot the old bush, here ... I'll be closer to the autumn cold. I will prepare the KIDNEYS! I want to flavor some tea with my kidneys. Here!
And the early varieties have withered. Me too. Need some late bushes. They usually give a small harvest, but the berries of the late varieties dry well and the leaves are good before frost
lappl1
Radushka, yeah, I'll breed currants ... And raspberries, and strawberries, and peaches, and apple trees, and plums, and apricots, and a pear ... In general, I'll breed everything. Because I am not satisfied with what is. And even more - that which does not exist. No plum or apricot at all. There are very few raspberries - undersized. Currants 2 old bushes, apparently early. But the berries were still small and very good. small. Need to uproot. Thank you for telling me about the peculiarities of currants. I didn't know. In the spring we will buy in the nursery. They don't plant in the fall - nothing is accepted. This is what my neighbor told me. Winters with little snow in the steppe, and at night up to 30 * minus, that's all that freezes out that was planted in the fall.
Zena
Radushka, the sun .. tell me pliz .. so I gathered a currant leaf today .. wrapped it in a diaper ..
and raspberries are in my freezer .. I've already had it three times here and there
so the question is: can you make currant-raspberry tea tomorrow? or is it better to freeze the currants .. and then have tea.
Radushka
Zhenya, I would also freeze the currants. At least a day. She then rolls easier on rolls. And unfrozen will simply break, even if it is sluggish! And I do not recommend twisting them at all. They will twist into dust. Gotta cut
Zena
yes, I remembered .. that such a composition is only rolls .. thanks!
ok .. then I'll freeze and next weekend I'll do mine ..
Radushka
Zhenya, good luck!
Zena
Radushka, the currants wilted perfectly .. laid it freeze overnight ..
tomorrow you can already make tea yes ???

well tell me you can aaaaaa ...

today a friend at the dacha got hold of currants and raspberries .. well, a little cherry .. (she has such light leaves that are tender)
So while I sterilized the compote, I went through all the leaves ..
ooooo this is heaven and earth. sort through wild and garden .. leaves ..
everything is clean .. no living creatures there .. raspberry leaves are tender
and her currant is different from ours ..
I'll make a tea-off ...
Radushka
Zhenya, can. Just don't put cherries in currant tea, otherwise you will get cherry
mironirina
Radushka, I am very sorry, if not in the subject, I just do not know where to write about this experiment.
For me, the smell of currants is very strong and even aggressive. Making tea, I wondered how to muffle it. It would be possible to add aromatic herbs, but at that moment I had nothing. Then I ground a cinnamon stick on a coffee grinder to the state of sawdust, sprinkled it on the frozen leaves and ground it. While the tea was fermented and dried, I almost choked with saliva, and I got a delicious bouquet. I put it in a jar for aging.

Radushka,
Just don't put cherries in currant tea, otherwise you will get cherry

Is it possible to hammer the currants with something?
Radushka
mironirina, Irina, for the cinnamon, thank you so much! I love this spice! Only I have no currants. So ... next year I'll try. It's good that she wrote to my Temka. I won't forget, then.
Cherry clogs everything. Because its aroma does not disappear even at high drying temperatures. And, here, currants ... It smells less if you dry it even at 100, and if with a fry, then the smell disappears completely. True, the taste still remains
Zena

Zhenya, you can.
uraaaa canaaaa ..

nope ... I just picked a little cherry yesterday, but I don't think that I will take it somewhere .. that the cherry did not go very well for me

oh and this work is not easy drag out of the swamp .. cut the leaves for loose leaf tea ..
I came to rest for 5 seconds and once again see what temperature to set ..
in general, I'm tired of cutting by the end .. out of habit, the handles ached ..
even though I tried to cut it tooooooooooooooooooooooooooooooooooooooooooo too big .. it's a pity that they don't twist .. it would be beautiful!
in general, I will make a sheet .. if after drying it tastes like this
abaldet is called ..
went to dry ..
By the way, the question arose .. why fry in currant tea? to enhance or remove the currant aroma?
even I got confused .. litter if you wrote stupidity ..
Elena Kadiewa
Zhenya, fry 1/3 of all tea for color, and dry the rest of the currants at a lower temperature.
Zena
ah, there you go.
for some reason it didn't pass by me .. thanks!
I probably have a feeling of sadness .. to get up early tomorrow, but the tea has not dried out .. or rather, this is how you should write:
due to the fact that the sliced tea is sooooo voluminous, exactly half went into the oven for three leaves ... and it has not yet dried up .. now we have 15 minutes past ten .. I can only sit until an hour .. otherwise tomorrow I will be a walking amoeba ..
what to do then?
it is necessary to "bleed from the nose" to dry everything today .. or somehow you can save the leaves tomorrow ..
no yes ..
I didn't calculate my time .. I forgot that I had to cut it for a long time .. although I picked up a good knife .. I coped perfectly .. with the leaves ..
and that all as granular will not fit on three sheets ..
well varona .. what to say

and I also stuck tea from the leaf again .. brewed .. and it seems to me that he didn’t come out with me .. the color is dark .. but the bite ..

Radushka
Zhenya, everything will be fine. You shouldn't have tried, of course. It is best to try if you really feel like it, when you pour it into jars from a pillowcase

I'm new here. I read all the recipes! I myself tried last summer to make different fermented tea gulls, but did mono, and then mixed. But I did not ferment the currants. Tore up the garden, it kind of smells. Dried. And last year we were in the mountains. Near the waterfalls, while walking along the path along the rivers, I pinched everything and folded currant leaves in my backpack. So they are generally different! So saturated with aromatic oils that they stick to your hands! I just dried them and put them entirely in 3 liter jars. So when I open the can, the fragrance is all over the room. And I open the garden one - so-so ..... well, it smells of course, but no comparison. Then, when I formed tea, I took a couple of leaves and rubbed between my palms and added to the granulated one. The aroma interrupted EVERYTHING! I did it with cherries and ivanushka, mountain currants were heard brighter than others. So I think if this year it turns out to collect this, is it worth fermenting it? I will definitely try the garden one with both apple and raspberries. But the mountain ... I have a question)))
Radushka
Innesa, worth it. Simply dried, it still has a herbaceous flavor when brewed. And during fermentation, it disappears. The tea mix itself, of course, does not have such a strong smell. Ah, here's the taste ... And especially the aftertaste!

Then, if I type, I will. I wonder what happens.
Podmosvichka
Good day!
Today she cut off the leaves from 4 bushes, partly for now, so that my husband would not guess, otherwise he will be hysterical again.
She cut off the petioles on old and large leaves, left them on young pieces, it's a pity, they also smell like that
Leave it, but they will twist later, a question? I don't want to ruin the new meat grinder right away, I still have it virgin
Acacia
Hello, hello! I decided to try your "benefit", I left the apple tree and strawberries before the meat grinder arrived, and decided to do it with raspberries. And immediately the question. Did I understand correctly that we twist the leaves into one tube together? And chop before fermentation to speed it up? And another 3 hours of fermentation, and this is approximately at what temperature, otherwise I am not very good with the definition of the strongest smell. Thanks in advance and sorry for the tediousness
