We take the zucchini (if hard, then peel) and make mashed potatoes from it. BUT! Since it is very watery, you need to get rid of the excess fluid.
This can be done in two ways.
First: chop into cubes and salt. Place in a colander and drain. I do this at night. I put it in the refrigerator. Excellent result in the morning. Now simmer in the microwave (multicooker) until soft.
Second: bake the zucchini. Just bake. As for pumpkin caviar.

Now grind with spices to taste, sesame oil and olive oil, lemon juice.
