Chanterelles fried in sour cream

Ingredients

Chanterelles 1.5KG
Butter 100 g
Sour cream - 20% 250 g
Onions-large onion 1 PC.
Salt taste

Cooking method

  • Wash the mushrooms, sort out, cut the large ones into pieces so that they become approximately the same size. Take a dry, wide frying pan with a lid, put it on the stove, let it warm up well. Put mushrooms in a dry frying pan without any oil. align them slightly and close with a lid. Very soon, the mushrooms will begin to give their juice, it will be very good. lot. the coarse ones will swim in it, stew. Stir them until all the juice is completely evaporated.
  • When the pan becomes dry, with mushrooms and without liquid, add butter to it ... it may take more than I indicated, it all depends on the situation, just in case, stock up on a pack of butter (250 gr.). When the mushrooms are fried in oil in a pan, add finely chopped onions to them, and fry, stirring occasionally, until the onions are golden brown.
  • When the onions are browned, salt the mushrooms and add the sour cream. Put out a little and that's it, the mushrooms are ready.
  • They are delicious to eat with young boiled potatoes, which are good to pour over melted lard with cracklings. The greaves need to be cut smaller and thinner ... so that they crunch slightly, and there is still fat inside.

I am from Kemerovo, this is Western Siberia! .... we are flooded with rains and it is cold here .... not higher than +20, which is unusual for July. : (So the weather is just conducive to mushrooms. The places we have are very mushroom, and as soon as the chanterelles begin, this red wave will be visible from afar across all markets. We are waiting from day to day. At least some compensation for the cold summer.

and today I went to the forest))) the chanterelles have already gone, not knowing the places, we scored a small basket of chanterelles (about 4 kg basket) for a couple of white ones, and a can of blueberries)))) although the blueberries are just beginning, I I have already fried the chanterelles according to the recipe, but they are so tasty that there are no photos left)))

Veronica, Chanterelles are very good at freezing already fried in butter. It's just that they are not ice-cream, but just lovely. Probably those cooked according to your recipe can also be frozen. In winter, a frying pan with potatoes will fly away.
