Creamy salmon soup

Ingredients

salmon fillet or soup set 300-400 g
potato 5-6 pcs
celery root 1 PC
big carrot 1 PC
pickled cucumber 1-2 pcs
onion 1 PC
sour cream or cream a few spoons to taste

Cooking method

  • It is better, of course, when there is fillet, but a soup set is also suitable. In the Metro you can buy a salmon soup set for a penny and the soup will turn out to be very decent. Pour the fillet (pre-cut into pieces) or a soup set with water and boil for 10-15 minutes. While cooking, cut the potatoes and celery into cubes, three carrots and cucumber on a coarse grater, and also cut the onion into cubes. In a skillet in olive oil, simmer the onions and carrots. Add cucumber and sour cream and simmer until tender. Add potatoes and celery to the boiled fish. If you have a soup set, then take it out, and strain the ear through several layers of gauze so that bones do not get into the soup. Peel the meat from the ridge and head and put it in the soup. At the end of cooking, salt and add the stewed carrots with cucumber. You can also add black olives. Also delicious, but no one eats like that with me. Sprinkle with finely chopped dill before serving. Bon Appetit!

Oh, the recipe for this soup was born after my husband brought in a whole salmon from the store. We immediately marinated the fillet, but the ridge with the head and tail remained. And then I remembered that I had once seen a recipe from Hector Jimenez Bravo. Taking his recipe as a basis and adding our own preferences, we got our favorite soup, which even a child eats with pleasure. I hope you enjoy this soup too.
