painfully good reviews for the broth were

hyrasho, estimate from the experience of jelly, how much starch is required to thicken boiling water so much. so subtract this incomplete teaspoon from 150g of starch
Scarecrow
In addition, the broth contains not starch, but flour. It is more logical then to subtract from flour.

Thank you, they confused me more

Huh. You will laugh - for the first time in your life I read about starch in pancakes.
Likewise. I somehow usually with soda ...

I hasten to thank you for the pancake recipe! Baked it today. True, instead of starch, she introduced flour into the dough and added slaked soda with vinegar. It turned out to be thin, perforated and sooooo tasty.

I baked it. Pancakes are thin, really. There are not very many holes - but where do they come from without yeast or baking powder?

From heavily beaten eggs. These are some more holes in August in the photo. I beat the eggs with a mixer (there is a very similar recipe by Tatyana Tolstaya. She has no starch in the dough, and the rest is in a penny) and pour boiling water into it. Hot eggs are whipped into a fluffy mass. This mass of air bubbles during frying and then gives holes.

And with me, the same dough can give out a different number of holes in different pans. )) Metallic ones will draw openwork even without baking powder (if not contaminated with a thick layer of carbon), and Teflon will modestly depict a dull, monotonous landscape.

These pancakes came out:
Pancakes are thin in a hole
The portion was increased by half. That is, 3 eggs, etc. True, she left the starch and water as it is, and added more flour and milk. I beat it with a blender, since there is no hand mixer. And for some reason, after adding boiling water, despite the fact that I poured it over (330 ml), the dough did not become very liquid. Well, in my opinion. Fried about 5 pieces and added more milk to the dough.
It turns out sweet pancakes, a little rubbery, they walked away from the pan well, baked for my son at school, they will change pancakes for ditties, dances, songs. I also greased it with butter and sprinkled it with sugar. To be sweet.
As for the holes, by the way, on one frying pan, an old aluminum pan, they are very noticeable, and on a 2-year-old Fissman pancake with a coating, there were almost none.

Uraaa! Another user, with his own mind, has come to realize the difference between pans!
Yes, pancakes have almost no pattern in coated pans.

Lena, Bijou, and I got there: oops: the current is virtual so far: girl_haha: I read about the beautiful openwork patterns on pancakes in an uncoated aluminum frying pan from Kukmara and opened a hunt for her: strelyaet: three shops so far) but I don't give up, right now I had tea and buns and I'll rush to the market: mashina: at the same time I'll buy a miracle machine

Katyusha, is there no stainless steel in the house? My last ones turned out to be so perforated that I just barely turned them over - solid holes. And whatever she did, she lowered the temperature and liquefied the dough - they bubble and that's it. The daughter smears sour cream on the top pancake, and the next one does not need to be smeared, and so it is all in white flakes.)))

We sell aluminum frying pans right on the ruins of the market and even at small shops selling all kinds of plastic and not only nonsense. At the construction base there is such a warehouse that sells retail, so Russian aluminum (I don’t know, Kukmara or not) generally costs a couple of hundred and many sizes.

there is one, but it has high sides .. and its bottom is not solid smooth, but such holes, as it were, I bought the Belarusian Kuhar ...do you think to try it?
Bijou
Oh, so Petunov posted a video, where he just fried pancakes in such a pan.) So try it! Only first, overheat it a little and then cool it down to the desired operating temperature. And grease before pouring the pancake, and not from the very beginning.

Well, it won't work - you will fry the rest with the usual makar. I'm doing great in an ordinary smooth frying pan, photos are milen.))

I baked these pancakes today - I really liked the homemade ones! Even I liked it myself, and I'm not a "pancake soul", but these are delicious!

Today I baked pancakes according to this recipe. Did not like. No holes were observed. Pancakes are somewhat harsh (apparently this is due to the presence of starch in the recipe).
Tricia
NataliaThe hardness is related to the presence of eggs, the thickness of the dough, and your pancake mode. If the pan is not hot enough and the dough is not fluid enough, there will be overdried oak pancakes.
If you bake pancakes on flour and starch, but without eggs, the pancakes turn out to be thin and tender, so it’s not about starch, it seems to me.
