Lemon-lime sorbet with hot pepper

Ingredients

Medium hot pepper 1 PC.
Large sweet lemons 2 pcs.
Lime 2 pcs.
Granulated sugar 200 - 225 g
Water 750 ml
Orange zest optional 1 tsp
Tequila or vodka to serve as desired

Cooking method

  • - Cut the red pepper in half, remove the seeds. Use a grater to remove the zest from the limes and lemons.
  • - Put half a chili pepper, lemon and lime zest, orange zest to soften the taste, sugar and water in a saucepan. Heat over low heat until sugar dissolves, stirring occasionally. Then bring to a boil, simmer for 2 minutes without stirring. Remove from heat and let cool.
  • - Add lemon juice and lime juice, finely chopped remaining chilli to the broth.
  • - Pour the mixture into a container and freeze for 3-4 hours, mixing well several times (2-3 times per hour) in order to avoid the icy structure of our sorbet. Store in a freezer under an airtight lid.
  • - Get it 10 minutes before serving. Sprinkle with tequila or vodka. Or pour drinks into shot glasses and eat sorbet.

Note

Do not use very hot peppers. As a last resort, don't cook syrup with it, just add to the sorbet before freezing.
Use gloves when handling peppers.
