Cranachan

Ingredients

Orange juice and zest 1 PC
butter 2 tbsp
cream 100 ml
raspberry 500 grams
honey 3 tbsp
oat flakes 100 g
whiskey or cognac 1 tbsp
powdered sugar 2 tablespoons

Cooking method

  • Cranachan is a traditional Scottish dessert made from a mixture of whipped cream, whiskey, honey, raspberries and toasted oatmeal. Previously, the recipe contained fewer ingredients and did not include whiskey and berries, and instead of cream, Crowdy was used - a cheese made from slightly sour goat milk.
  • Traditionally, visitors to a restaurant or cafe mix a kranahan with their own hands - the waiter leaves containers with the necessary ingredients on the table, so that everyone can prepare a dessert in proportions to their liking. Crannahan is served in tall glasses. Also, this dessert can be found on a festive or wedding table.
  • CranachanPlace raspberries, 1 tablespoon honey, zest and juice of 1 orange in a small saucepan and bring to a boil. As soon as the raspberries give juice, remove the berries and boil the syrup. Then pour the berries over them and leave to cool.
CranachanMelt the creamy little. Add the remaining honey and brown the oatmeal until golden brown.
CranachanBeat the cream with powdered sugar. Add whiskey or cognac. Mix gently.
