Jellied cod with spinach and bell peppers with sweet and sour sauce

Ingredients

For jellied:
Fish fillet cod about 300 gr.
Broth water 300 gr.
Salt to taste
Parsley sprigs, small bay leaf, allspice peas optional
Spinach fresh + frozen 30 gr. + ½ tablet
Gelatin 1.5 tbsp. l. with a slide
Red sweet pepper 45-50 gr.
Sweet and sour sauce
For decoration:
Pickled cherry tomatoes
Rice vermicelli
Basil leaves young
Sweet pepper yellow

Cooking method

  • Cooking aspic:
  • Small fish Jellied cod with spinach and bell peppers with sweet and sour sauce
  • pour spices and parsley sprigs with water, salt and boil for 10 minutes after boiling. Turn off the gas and leave to cool in the broth. After 10 minutes, add fresh spinach to the fish and cover with a lid to soften. When the broth has cooled, take 80 gr. liquid and soak gelatin in it. Transfer the spinach to a blender, dilute with broth and beat well, adding frozen. Dissolve the gelatin in a water bath and, filter through a sieve, add to the spinach. Remove the fish from the broth. Add the rest of the broth to the spinach with gelatin. Mix. In jellied molds (I just have plastic containers Jellied cod with spinach and bell peppers with sweet and sour sauce) pour a little broth and put in the refrigerator to harden. Cut the fish into medium slices. Chop the red bell pepper into tartare. Put pepper in a mold with frozen jelly, then fish in the middle.

  • Pour broth halfway and set to harden. After 20-30 minutes, pour the remaining broth. Refrigerate overnight.
  • Feed and decoration:
  • Turn the jellied one at the bottom of the plate, placing the mold in hot water for a second to the brim. Pour sweet and sour sauce around the edges.
  • Place the cherry tomatoes. Garnish with microwave-fried rice noodles.

  • By the way, rice noodle decorations. Very interesting! It is usually fried.
  • It was too lazy to fry it - the microwave caught my eye. Break the noodles into pieces and put on a microwave plate. At any power (I tried it on everyone - the same way, I tried to soak it), withstand until it swells and changes color. The vermicelli swells and becomes white and crispy and curls interestingly. But for some reason not all - tails remain. Decorate the dish with it - quickly and beautifully!
