Jellied pike perch

Ingredients

Zander 1-2 kg.
Water
Bay leaf 2-3 pcs.
Black peppercorns 5-6 pcs.
Allspice 2-3 pcs.
Ground white pepper taste
Salt taste

Cooking method

  • Peel the pike perch, gut, cut into large pieces.
  • If the fish is not big, then cook it whole.
  • Cover with water just to cover the fish.
  • Add bay leaves, peas and allspice.
  • Cook until tender. When cool, take it apart from the bones.
  • Put in a beautiful dish, strain the broth through a sieve.
  • Season with salt and white pepper to taste and pour over the fish.
  • My pike perch is not purchased, I always cook with the head, the fish freezes perfectly without gelatin.

Cooking program:

Multicooker, slow cooker, stove.
