Liquid yeast based on fruits, vegetables, herbs, tea ... (page 47)

Ludmila, it's easier for you, but we live in an apartment, and our oven is stationary, you can't move it.
Farida
For a long time I have not been in this topic, after April 15 I baked bread a couple of times. Both times it turned out not very successful, heavy bread. Deciding that my hands are growing out of the wrong place for such breads that people bake, for a look, I put my yeast away in the refrigerator. And I forgot about them. The other day I accidentally stumbled upon them, took them out of the refrigerator, put them in the sun. They fermented !!!! And the smell is so nice. I baked bread according to the recipe "Golden Bread" from (Anna in the Forest). True, I had to deviate from the recipe, I put the pre-enzyme in the morning, until the evening it was not murmur, but by the morning it rose three times. work, in the afternoon my husband baked in a bread maker without hesitation. It turned out to be very tasty soft bread with a slight sourness. For two months the yeast stood in the refrigerator and during this time gained strength.
lappl1
FaridaIt's great that you still baked bread, and you got it! Congratulations ! Yes, this bread is not fast, but it is worth tinkering with. And you correctly noted about yeast - nothing is done with it during long-term storage, it just gets better.
Venera007
Yes, yes, only better, I specially keep two cans in the refrigerator so that they ripen longer and taste better
lappl1

I specially keep two cans in the fridge,
And I have 4 cans. And everyone is doing great.
Venera007
Ludmila, yeah, in the summer I'll start the third, on some berries from the garden :) or leaves? Or maybe on apricots ... In general, I haven't decided yet :)
lappl1
Get started, Tanyusha. You can start on everything at once - it will be tastier.
Venera007
Yeah, Lyud, I did this with my first ones, and now I mixed them with rosehips
galavan
Dear Lyudmila - lappl1, You are writing about "homemade" fireweed / lime honey. Can I have a recipe? I would be sooo grateful!
lappl1
galavan, and you can also make gorgeous tea from fireweed. And not only from fireweed. if you don't already, then welcome to tea themes and, of course, to the theme of "honey" from willow-tea flowers. Here are active links to these topics:
- Fireweed "honey"
- Ivan tea (fermentation of fireweed leaves) - about Ivan-tea;
- Fermented tea made from leaves of garden and wild plants - about mono-teas from the leaves of a wide variety of plants;
- Country tea (fermented) - seven in one - about creating tea mixes at the stage of making tea.

Natusichka
Lyudochka! To be very honest, I just don't have any words ........ only emotions! How could I miss this topic ???

All is decided! Today I am making sourdough! I have some strawberries, which I don't really want to eat anymore, because they are a little "windy" in the refrigerator. Can I use it? What else can you add? Cherries? Do you need to grind them?

I don't recognize dry yeast at all ... for some reason my inner voice doesn't allow me to use it ...
Therefore, for me this is a very, very interesting topic.
If you read, I used to make yeast from hops (this is how my grandmother, who lived in the Krasnodar Territory, did), my grandmother baked soooo bread from them ... She herself grew hops and made yeast herself. So I tried it. I really liked it!
Now I want to try it with such yeast. Resolved, I will make liquid yeast!

Lyudochka, please advise, what else can I add? Can you just grind fresh cherry leaves, for example, or apricot and add to fresh strawberries (berries) and cherries?
lappl1
Natusichka, honey, well, it's good that even now I saw the recipe. Now is the time to do them.So much fresh is growing. Do what you want. And add your strawberries. And cherries, and all sorts of leaves. The berries do not need to be chopped, otherwise there will be porridge. but the leaves can be cut. I advise you to make several jars in which there will be different materials. I have 4 types of liquid yeast. And I don't have much. They are perfectly stored in the refrigerator even without top dressing, and with top dressing they will only get stronger. Try it. Anyone who baked bread on the railway does not even want to eat bread on ordinary ones.
Natusichka
Thank you, Lyudochka! Now I am sitting at work, but already all at home ... I already imagine how I will make yeast!
but you write that you can make from tea ... is it from dry tea leaves or from brewed tea? I realized that it was dry.
That is, you can mix different and all kinds of products in one jar?
lappl1

Natusichka, correctly understood, from dry tea. Look at the photo in the recipe. There you can see tea in granules on a saucer. But you can also do it from fresh grass. After all, I laid out the recipe in March, when there was no greenery. And now there is plenty of fresh tea stuff.
Quote: Natusichka

You can mix what you want. The main thing is that the products are tasty. If fresh material, then 4 tbsp. l., if dry, then 2 tbsp. l.
galavan
Ludmila, thank you very much for your prompt reply. I have Ivan tea - my sister handed it over from Moscow (you can't buy it in Israel). I will master your recipes. Thank you very much.
lappl1
Galina, to your health!
Natusichka
Lyudochka, Well, done!

My God ... that I just got up yesterday ... honey in one jar is sunflower, in another is buckwheat, in the third is floral ... and what I put in jars does not lend itself to logic at all ...: strawberries, cherries, apples, rose hips, cranberries, viburnum, dry tea ...
In one word, we are waiting!
lappl1
Natusichka, well, what beauty have you made! Smart girl!
Quote: Natusichka
and what I put in jars does not lend itself to logic at all ...: strawberries, cherries, apples, rose hips, cranberries, viburnum, dry tea ...
Why is this not amenable to? It is quite logical - the more the better. The main thing is that I put everything very tasty!
Quote: Natusichka
In one word, we are waiting!
We are waiting, waiting! The main thing is to provide them with warmth.
Good luck, Natasha!
Natusichka
Luda, but look at the photo ... will I have where to wander around? Not much content there?
lappl1
Natusichka, in principle, enough space. Did you do everything according to the recipe?
Natusichka
Yes, Lyudochka, everything is according to the recipe ... only I can see that you got much less of it in the jars than I did ... so I'm afraid ... how it will start to climb ... what if it explodes ?!
But I already tuned in, took all the precautions, put the cans on the tray, lifted the curtains around ...

I really want a healthy bread ...
By the way, Lyudochka, what kind of bread do you recommend making the very first one? Ehh! Yeast is not ready yet, but I'm talking about bread ...
lappl1
Quote: Natusichka
only I see that you have a much smaller volume in your jars than I have ..
Natusichka, I did it on dry material, it is smaller in volume than fresh.
Quote: Natusichka
what kind of bread do you recommend making the very first one?
Natusichka, yes any! I like everything. Can the one that I have banana. It has the least ingredients. Many have done it, everyone is good at it.
Natusichka
Lyudochka,I got it. Now I'm looking forward to my yeast.
Natusichka
This morning I looked and ...

Are they already starting to roam ??? So early? The temperature there is constant 24-25 degrees ...
lappl1
Quote: Natusichka
Are they already starting to roam ??? So early?
Natusichka, aha, start! Everything was fresh for you, so the process started earlier! And it also seems to me that you put in more berries than according to the recipe. Now watch out - plop the can several times a day and then open the lid to release the carbon dioxide. The temperature will go.
Natusichka
Yes, comrade General !!!
Well, the volume of berries was clearly arbitrary .. I did not realize how chopped apples, strawberries, etc.ingredients can be measured with spoons ... I didn't have enough imagination, so I put as much as 4 times fits in my mouth ... This is my unit of measurement ...
Is it very scary if I put a little more than what I put?
lappl1
Quote: Natusichka
so I put as much as 4 times in my mouth ...
: lol: Oh, how amused!
Quote: Natusichka
Is it very scary if I put a little more than what I put?
no, in this recipe it is not critical! Now make sure that your extra units do not run away ..
And, most likely, you will have to bake bread earlier than in 6 days. Or feed the yeast, otherwise they will quickly eat all the sugar.
Natusichka
And can they escape ???

I understand correctly that it will be possible to bake when they stop hiss to wander?

Then I will select the required amount of "yeast" (as indicated in the recipe), put new sweets in the jar, add honey and I will have to wait again until it all fizzles or put it in the refrigerator right away?
Albina
Natusichka, and water in such a volume that we took must be topped up. After a day (and if it's hot, then earlier), you can remove it in the cold.
Natusichka
Yeah, okay! Thank you!
lappl1
Quote: Natusichka
Do I understand correctly that the oven will be possible when they stop hissing and ferment?
Natusichka, they will still hiss if shaken. Just watch when the contents of the jar begin to sink.
And about the rest Albina answered you. Thank you, Albinochka!

Tatyana,
Musenovna
I have mold on the surface in one of the cans (made of dried black currant), should I throw it out now, right ?!
lappl1
Katerina, yes, it won't do. You need to start new ones and look at the temperature regime. They must have been cold.
Musenovna
Ludmila, this is unlikely, although it is not hot at home, but cold. And I put 2 cans, one with dried apples, others with currants. Apple yeast did not grow moldy, unlike currant yeast. I will try again.
And another question about the liquid, you have more than half of the water in the pictures in the jars, and my 500 gram ones are half full. Do you need to add more water or do you have fewer jars ?!
Albina
Quote: lappl1
for the preparation of liquid yeast of each type, we need:
- glass jar with a capacity of 0.5 liters;
- water at room temperature (not chlorinated, filtered, not boiled) - 250 ml.;
- sugar / honey - 1 tbsp. l.
- any fruits (dried fruits), vegetables, herbs, tea (not washed) - 2 - 4 tbsp. l. (2 tbsp. L. Add if we have dry material, 4 tbsp. L. - if fresh).
The recipe clearly states Everything we did according to the recipe

Albinochka, Thank you !
Katerina, I did everything as I wrote. I have 0.5 liter jars (I just looked specifically). But to 250 ml of water (measured out with a measuring glass) honey and the material on the basis of which the yeast was made was added. Therefore, there cannot be exactly half in the bank.

Tanechka that's for sure! I love everything useful and I try to do so.
I was so warmly welcomed into the tea gazebo and in general about tea making!
Albina
Lyudmilochka, glad to help
lappl1
Natusichka, I am so glad that you are comfortable in our company.
Natusichka
And I'm so glad !!!!
I'm still that slow-witted ... I need to arrange everything clearly on the shelves, only then I do everything with pleasure ... Therefore, I can "stick" for a long time ... and meticulously ... so forgive me ...
lappl1
Natusichka, bother, honey! The main thing is that you succeed.
Natusichka
I really want it to work ...

You will succeed. Summer is so sick now, it's warm, and yeast can be made from anything.
Venera007
And every time the bread tastes better. There are no photos of holes, but this one is more eloquent:
Liquid yeast based on fruits, vegetables, herbs, tea ...
He dragged it off entirely, did not even give a piece to cut ...
lappl1
Oh, Tanyusha, what a cool photo! What a guy! Well, mommy, well, you baked some bread! Do not come off ...
Tanya, how glad I am that you bake bread on the railway! Smart girl!
Albina
When there are such lovers of bread, how can you resist baking over and over again?
Venera007
Girls, thanks! So nice)) Albina, because I bake because the bread soul grows
