Very strange sour cream or crooked handles, but when whipped, it turns into water every time in density. Previously, it was whipped normally, I also added gelatin for strength. And now it doesn't work. And it's not about the stevioside supplement. Last time on another cake, whipped with sugar - also the cream was terribly liquid and was absorbed all into the biscuit .. And today, per serving of churros there were 750 ml of sour cream and 0.5 cups of diluted gelatin (dry gelatin is diluted in this amount of water) - and the whole volume was absorbed into sticks. What am I doing wrong?

Based on personal experience, I can say the following about sour cream: There is only one type of sour cream that does not liquefy when beaten with sugar. This is sour cream of 30% fat content. If possible, you can take sour cream of even higher fat content. We, alas, do not sell this.
And so far only 30% sour cream has never let me down. Several times I caught myself feeling that such sour cream even, as it were, thickens when whipped. I used it, whipped with sugar, instead of cream on cakes. I put them on sandy berry pies. I coat it with microwave biscuit cakes as a layer. All just great! The sour cream layer does not flow. Keeps height and becomes even thicker in the refrigerator, although, it would seem, where else?
Try this sour cream. I hope my thoughts will help you in choosing.
