Rada-dms, Olya, baked your bagels today. It was necessary to attach homemade cottage cheese somewhere, looked for cottage cheese dough and came across your recipe for bagels. Only I baked them not with yeast, but with Levito madre sourdough, of course, I added a little yeast (3 grams of dry), since my sourdough was only 20 days old. I put different types of chocolate in the filling: strawberry, orange, white and milk. Sugar put 70 grams. The bagels turned out to be amazing: tender, airy, delicious. And what aroma stood during baking - beyond words. Olya, thank you so much for this miracle.
