I inherited the eggplant caviar recipe from my mother. In general, I eat almost any eggplant caviar, even from cans, but my mother's !!! The main problem is to stop and not eat it in one sitting.

Somewhere in my fifties, I learned to cook it myself. And I understood why my mother made caviar so rarely. The penultimate phrase in the recipe was very reminiscent of an anecdote about an English lawn - "and two hundred years to cut." Here it was necessary to "fry over low heat until the liquid evaporates completely, stirring continuously." Complete evaporation was achieved in a few hours. One time I neglected "continuous stirring" - it cost our family a frying pan.

Considering that no one in the family except me eats eggplant caviar, this dish remained a rare delicacy. Moreover, every time after the trial, my wife looked around the kitchen disapprovingly, everything - from floor to ceiling - splashed with eggplant and tomato juice.

But then she appeared - DeLonghi 1394.

I share the recipe.

Step one. Put 1 kg of eggplant in a bowl (without a stirrer), fill it with water (and they don't want to - they float; well, somehow) and put on the Multicooker mode, power 4, for 25-30 minutes. The degree of doneness is defined as for potatoes (soft when pierced).

Step two. The eggplants were caught and left to cool. And return the mixer to the bowl and put 4 finely chopped onions. Fill with oil (well, here who likes it, but level 5 turned out to be not enough for me) and set it to the Multicooker mode, power 4, for 20-25 minutes - in general, it should become a little darker than golden.

Step three - no multicooker. Eggplants with cut off "butts", about 6 tomatoes and fried onions are scrolled through a meat grinder (medium grid). Add salt, sugar and black pepper to taste. Stir until smooth.

Step four. We send the resulting mass into the bowl (of course, with the remaining stirrer) and put it - you will laugh! - on the Multicooker mode, power 4, 40 minutes. After 15 minutes you need to open the lid. Don't be afraid - there will be no splashing! From the word "absolutely".

And that's it! Then the resulting product remains, as usual, first cool to room temperature, and then put in the refrigerator.

I didn't take photos. It's just that the results of the first and second steps are obvious, and the result after the third and fourth steps looks, to put it mildly, like ... like "overseas eggplant caviar."

But the taste sensation is fully in line with expectations! Yes, this is it - my mother's caviar. And let anyone who dares to repeat it remember my mother with a kind word ...

When Kuzka whistled, there was no water left. I mixed the horns with tomato Bolognese sauce (about 1/3 can) and grated cheese and put the pork tightly on the "pillow" of spirals. Oven, level 4, 20 minutes.

Immediately after the signal, without opening the lid, I started the Airfryer, level 4, for 15 minutes. After 5 minutes, I turned all the pieces to the other side, and after another 5 minutes, I changed the more fried places with less fried ones.

The carbonate turned out to be soft and surprisingly juicy (Olga claims that it would be very dry in a pan).

But I don't have the habit of photographing food ... (Olga claims that until no. Oh well...)
