Ingredients

Dough:
Sekowa ready-to-use starter culture 15 g
Warm water (40C) 150 g
Wheat flour, premium 150 g
Dough:
Opara all
Warm water (40C) 160 g
Wheat flour, premium 400 g
Sugar 20 g
Salt 8 g
Vegetable oil (I have mustard oil) 20 g

Cooking method

  • Mix Sekova with water with a whisk until completely dissolved. Add flour. stir until it is completely moistened. Close the lid and leave at 30C for 12 hours. You can put the dough right in the HP bucket, but it's more convenient for me in a plastic container.
  • Add water to the finished dough, beat with a whisk until completely dissolved. Pour HP into the bucket.
  • Add all other ingredients. Switch on the "Dough" program. I have 30 minutes kneading + 1 hour fermentation. After the end of the program, I left the dough for 1 hour. I put a terry towel on top of the Bread Maker to keep it warm.) During this time, the dough rose in a regular dome over the edge of the bucket.
  • Remove the towel. Switch on the Baking program for 1 hour.
  • I baked the first bread on bakferment in the oven according to all the rules HERE.... But laziness is the engine of progress. Trying to simplify the process even more, I tried to bake in a bread maker. There were several options: with a delayed start, for example. But first I chose the semi-automatic mode. Moreover, already in the process of kneading, I realized that I was mistaken with the flour (I did not take into account the flour in the dough) and had to be corrected with water. I didn’t hope that we would get something efficient. But the result exceeded all expectations. My child does not eat bread. More precisely, eats only white and soft. Therefore, for me, the indicator of successful bread is that he asks for a sandwich with butter and jam !!
