Herculean fermented wafers

Ingredients:

Butter 200 grams
Fresh milk 500 ml
Hercules sourdough 460 grams
Wheat flour 200 grams
Salt 1.5 tsp.
Sugar 2 tbsp. l.
Eggs 4 pieces
Baking powder optional

Cooking method

  • Heat the milk with butter (so that the butter dissolves), let it cool to 40 * C.

  • Put all liquid foods (except eggs and baking powder) into a bowl (very large), then add flour, salt and sugar.

  • Stir, or better whisk all the products well with a whisk, close the bowl with plastic wrap or a lid and put on the table for 10-12 hours (quite enough). The dough will be thick sour cream or "pancakes"

  • During this time, the dough will double in volume.

  • The dough rises very well, becomes very loose and delicate inside. When the dough is ready, add eggs and baking powder (optional) to it, beat the dough very well again with a whisk. The consistency of the dough will be "liquid sour cream".

  • Heat the waffle iron (or waffle iron) and spread the batter on them in portions and bake the waffles until tender.

  • Waffle dough consumption:

  • For thin waffles - one tablespoon. The waffles are crispy.

  • For thick waffles - 1/2 or 3/4 measuring cup (240 ml). The wafers are moist.

  • I made waffles on two different waffle makers.

  • Thick wafers resemble pancakes on yeast dough in consistency and taste, so they can be fried in a pan like pancakes, with a little oil. But from a waffle iron, they look beautiful.

  • Thin waffles, this is a "tea" version, a little sour.

  • Conclusion: I liked the dough for waffles with herculean sourdough, I will put it on and fry the waffles-pancakes again.

The principle is the same as in the Ayn recipe, which I adapted, and the dough is thinner.
My inside was not wet, not even very soft. Average between crispy and soft. Hot ones could be rolled up, and cold ones were already hard.

If you saw on the waffles, then these are jam berries and white cream. And your baked milk in a cup.

And the dough, of course, is gorgeous with sourdough, it rose without any yeast, despite the large amount of oil. So loose inside. And the Hercules itself is nowhere to be seen, if only dark blotches.
