Someone here asked about the preparation of this honey on zhelfix. I tried it several times. Zhelix precipitates out in grains when citric acid is added. I ended up doing it on agar-agar. For 1 liter of infusion I took 2.5 grams. agar-agar, one kilogram of granulated sugar and 2.5 gr. citric acid. The consistency is similar to that of young honey.
