Ingredients

Fillet of white fish (haddock, hake, pollock) 500-600g
Bulb onions 1 medium onion
Fat cottage cheese (Adyghe cheese) 2 tbsp. l riding
Young cabbage (zucchini) 100 g
Greens (dill, cilantro, parsley) Taste
Spices (ground pepper and hops - suneli) By a pinch
Sea salt Taste
Eggs 1 PC.
Mayonnaise - Art. l optional)
Corn starch (semolina) 1 tbsp. l

Cooking method

  • This recipe is very many years old, and, in our opinion, one of the best options for fish cakes.
  • - We take fish fillets, if a good meat grinder or chopper, then we use leather. If we make it from frozen fish, then we thaw the fish in a cool place in a natural way and very well !!! squeeze out excess moisture!
  • - In a small frying pan, let the onion, chopped at will, in a small amount of oil, until soft, and fry quite a bit.
  • - Add onion to the preparation, a little young tender cabbage (you can replace it with zucchini or zucchini, especially in winter), a little fatty low-fat cottage cheese or Adyghe cheese, an egg (I have a couple of quail), dill, ground pepper, suneli hops or seasoning for fish, and starch, salt.
  • - Mix well in a blender or pass through a meat grinder and let stand in the refrigerator until cooled.
  • - We take out the minced meat and form the cutlets with wet hands, roll with flour or breadcrumbs and fry in a well-heated pan on one side until golden brown.
  • - Gently turn over to the other side, fry for a couple of minutes, add a couple of tablespoons of hot water, close the lid, reduce the heat to a minimum and let it sweat for another 5-7 minutes.
  • These cutlets are delicious cold with ketchup, fresh herbs and Borodino bread!

  • If the cutlets fall apart in the hands during molding, then most likely the fillet was not wrung out well!
  • Do not use old cabbage, cabbage, and runny curd.
  • For piquancy, you can add 1 tbsp. l mayonnaise or a clove of garlic.

And if you make from cabbage, then you have to look, sometimes it is so vigorous, fragrant, then it is better to scald it properly in a chopped form, and if it is sweet, white, then it will do. You can add Chinese too!

But the cutlets did not stick to me at all. The mince was kind of crumbly. Something binder was missing in him. I think this is such a mince. I bought ready-made minced cod meat at the Red Caviar store. If the cutlet turned over and did not fall apart, then then it becomes covered with a crust and everything is fine.
I will definitely cook it again according to this recipe, but from a different minced meat.
