Otherwise, the meaning in striping is lost: you will end up with long strips of one-color dough, at the junctions of colors - with some kind of transitions. This is not what we want. Therefore, you cut the rolled striped layer across into sectors equal to the width of your dough sheeter. And then you pass these rectangular / square pieces through the noodle cutter across the strips. Then every macaroni will be completely striped and with all colors. And they have the best length for eating. I hope I wrote it clearly. If you want, I'll take a picture today for clarity, I'll do it again anyway.
