Lenusya, how beautiful they are with you (I have no doubt that they are delicious for a minute). And what is this magic wheel that makes such beautiful edges?
And do you make the dough for pasties the same way as for manti in your master class?

And what is this magic wheel that makes such beautiful edges?
And do you make the dough for pasties the same way as for manti in your master class?
Irish, the wheel is like this:
Dough sheeters-noodle cutters (model selection, features, reviews)
And the dough, yes, like on manty, only abruptly, since it is no longer rolled out by hand, but on a typewriter.
The composition is as follows:
Flour - 700 g
Eggs - 2 pieces
Salt - 1 tsp
Water (with eggs) - 350 ml
Rast. oil - 1-2 tbsp. spoons.
I recently started adding vegetable oil to the dough for manti, dumplings and dumplings. It turned out that it keeps the juice inside very well and does not sour. And it suits very well for chebureks. Eggs + plant the oil acts so that the dough becomes crispy, but not hard or rubbery - it is very easy to bite off. And the surface of the chebureks is covered with beautiful bubbles.

Elena Tim, Helen, what a beauty! And all thanks to me. From the second batch to me, please, a couple of pans came out. I also baked 2 times on the weekend. With one serving, I get 24 pasties. The mustache was eaten, and on Sunday I had to do it again)))

Lena, I don’t put eggs in the pasties dough. Growth. oil, yes. The bubbles will be smaller, but there will be more. The dough should really be quite steep, almost like noodles. And it is better not to use flour of the highest grade, bakery. I use general purpose flour for this purpose. The dough does not break when frying, but I roll it very thinly (with handles, handles) and there is a lot of onions in the filling, so that the abundant juice remains in the cheburechka. And the dough on the beer is very tasty. Minced onions not with a meat grinder, but with a knife (you can use a food processor) Salt and roll well with a rolling pin on the board. Girls, I'm sorry if I repeat what everyone already knows, I guess. Teaching such professionals is the last thing

Yes, you should try vodka in the dough. Probably the beer dough is delicious because there are degrees too

shlyk_81
Well, this, as they say, is not for everybody))) I have long wanted just such pasties. But our friends were too fat. They are made from dumplings and fried in a dry skillet. It tastes and colors ...

Maybe I also need a lipezdrichesky machine? And then I have not bought anything for a long time, save me, poke me with a pug into the links on the shops, well, advise which one I should take. And then my head already ached while shoveling the topic.

And now I only make pasties according to this recipe. And what she noticed. Be sure to put only the yolk. Once I laid a whole egg and the pasties were no longer so tender and crunchy. I advise everyone, very tasty

Catwoman, Len, I tried Marcato .. of course I will advise her ... made perfectly ... it is easy to move the wheel to the dough rolling modes ..... I am delighted ...
in the store I wanted to buy a Chinese one ... I told mine already here ... so there the rollers moved and moved apart diagonally ... horror ...
Catwoman
Zhen, I have a Chinese one, I am too lazy to turn the handle, so I think maybe it will be better with a motor. And where did I buy the price. Unless, of course, I strain too much with questions. And then I have a lot of small in my head ... Either a brand ... or an atlas ...

Lena, and in what mode did she roll it .. on the thinnest one ??
I have never made pasties in my life ... but they love mine ... I just bought frozen ones and fried them .. but what would I myself ... nope ..
and the knife that showed .. it only cuts the dough right? I seem to have a similar old one given away for a long time and is lying idle ...

I don't know what Lena will answer, but I rolled it out on the Atlas on the seven (only 9 positions). For pasties it is not worth thinner, in my opinion.

Divna, Zhenya. I also ordered in this store. They sent it quickly. Courier home.
But they have 100% prepayment.

Light .. yeah everything is clear and fast .. I sent a photo of the invoice for payment and on the same day they sent it to the transport company ... and the transport low bow sooo quickly and safely delivered ...

there remains the marcato and the noodle cutter ru ... probably ...
Elena Tim
Quote: Divna
Lena, in what mode did you roll it out.on the thinnest ??
My car has 6 divisions of thickness. The thickest is 6. I get to 2 and that's enough. Otherwise the dough will be too thin.
Quote: Divna
the knife that was shown .. it only cuts the dough right?
Yeah, Zhen, only cuts. Yes, sobsno, and there are no special problems. You don't have to take a Cheburek in your hands to glue it, pressed the edges to the table and rolled it with a wheel, that's it!

It seems that I decided (for how long) - I will take the Empire - I really want to gnocch I found 2 options - one - a complete set with a motor and two cutters, the second - a manual and a separate motor. Separately, three hundred kopecks are more profitable. The difference between the machines themselves is that the one that is more expensive is indicated in the specification - 2 pairs of shafts. Why the dough sheeter needs 2 pairs of rolling shafts, as I understand it, the shafts are not entirely clear to me, but I am not special in them, this is my first such machine. Or is it somehow radically improves rolling or what? Or is it all like that? I will contact the store, but could you take a look at your cars? Something I'm confused

Girls! Does anyone know if Norpro Pasta Machine Motor fits Marcato dough sheeters?

katko, Katerina. On a noodle cutter. I also took ru. But that was three years ago and the delivery was in Moscow. They also brought it quickly.
But they only have an Empire there. On Marcato, they respectively have Marcato and not much Empire. So you have to look at what's available where.
Good luck to you!

Here's another store. The prices are still old there. I just got a letter from them.
I also ordered there, but the product I needed was not in stock.
But they contacted me right away, they said that as soon as the goods appeared, they would immediately call back.
They have many pick-up points in Russia and pay on delivery.

Lena, Markato is a company and she has two models - Atlas / which has removable cutters for noodles / and Ampia / which has cutters that are not removable, it goes in one monolith /
If two widths of cutting noodles are enough for you (this is the standard, they come in both removable and non-removable), then you can take the Ampia.
And if you plan to buy additional baits of a different width or for ravioli, then, of course, you should take Atlas, where the baits can be changed.

Hello girls! I have been on the forum for a long time, but I do not write, but, basically, I read. She tossed about between the Empire and Marcato for a long time. I'm a deviceaholic. Therefore, I decided for myself to buy the Empire Titanic without a motor + a gnocchi attachment and a Marcato with a motor, but later, when the euro rate falls a little. I bought the empire here, if someone needs:
🔗
The prices on the website are valid, delivery in Moscow is free.

Marcato wanted to take on marcato. When talking with the manager, it turned out that the price on the website of the decree is lower than they actually sell. They calculate the price depending on the euro exchange rate. Their euro exchange rate is clearly overvalued. At the time of the call, it was 72 rubles, and they counted 80 rubles for 1 euro. When asked about the price of noodle cutters in euros, they answered vaguely that it was about 160. Delivery to the pickup point in Moscow in the region of 480 rubles. After counting and thinking, I decided to order Marcato later and, most likely, on foreign sites.

I want to say thank you to everyone for sharing your knowledge and useful information.

I ordered a typewriter for tomorrow, but still decided not to take it, well, I want a 700 model like Lenka's, if anyone wants tomorrow, here will be 2 failed 650 model cars, an electric drive, 7500 each, for today this is the cheapest price in Moscow. I give a link if anyone needs
🔗 (it says there under the order, but in reality 2 cars will be brought to the company on Monday, picked up after lunch at the Falcon).
Catwoman
Eh, Irina, if you were closer, I would run and take one for myself for the New Year.
