I added unmelted butter, and later in discussions I saw that they melt ... and I melted for 12 minutes - as in the recipe, I did it according to the first option with the melting mixture
it turned out very gently, straight airy soufflé .. but it should be different as far as I understand

Actually, melting occurs when, according to this version of the recipe, "protein swelling" occurs, and the fact that 12 minutes is already the final stage. I mean it. You have to hold it there for 3 hours, 1 hour is not enough. But here I cannot fix it.
