Ivan tea (fermentation of fireweed leaves) - master class (page 86)

RinaM
Quote: Natalo4-ka
It seems to me that there is more than one tea in your village
This is hardly the case. The approach to Ivan-tea is only through our section, from all other sides there are poor approaches - ditches and windbreaks. Here is a four-legged animal, maybe. Elk and wild boar sometimes walk here in the winter, we saw footprints in the snow more than once. And now the grass was specifically crushed. Maybe someone has a bed there?
I already understood about the early gathering, I am tuning in for the next summer. I might have started collecting earlier this year, but I'm afraid of ticks, I was waiting for them to finish fiercely. For this reason, mostly in the thickets and in no hurry.
mironirina
And one more thing I want to say, we all "catch up" with the smell, delicious, magical, not noticing that our nose has already sniffed, got used to the smell, so we hardly notice it. Recently I was drying tea, sniffing and in the process of fermentation - I caught the smell, and in the process of drying - I smelled freshly baked tea so that it would not smell, and I thought that the tea did not turn out as I would like, it will probably be odorless. I thought about it and went to the store. I walked in the fresh air, I go back to the entrance - my dear mother! smells already on the second floor. And I live on the fourth.
RinaM
mironirina, Irina, yes, this was my second mistake, the first one was grinding the leaves that had been frozen, and then overheating, leaving them for a long time. Everything was included and worked.
Semblis
mironirina, Irina, aha near the oven I'm standing in the way of tea ... I don't feel anything)))) I went into another room, I feel))))
In addition to me, you can see from the collected leaves there are also local Ivan tea lovers. Recently we met a man in the forest, got into a conversation, he doesn’t bother, he brought it straight from the bags into the meat grinder, I asked about the snails, twisted it together with the snails and immediately dried it.
Citizen
RinaM, Marina, washing the collected leaf is simply a crime, because bacteria that are involved in the fermentation process and whatnot are washed away. And if you want to get Ivan-Tea not only tasty but also healthy, then you wash away, for example, bacteria such as bacillus subcilus (and not only), thanks to which IMMUNITY exists. So draw your own conclusions. I wrote earlier that the height of perfection is when tea is not only tasty but also healthy, and for me the latter is primary!
Seblis, Marina ... so you still have everything ahead, I'm talking about smells. The time has not yet come for you to be surprised. When you write that the smell was divine / fabulous or the like, it means that you were floating above the ground with bliss. But, as they say, waiting is more pleasant than the most expected.
RinaM
Citizen, Igor, yes, I already understood. I have only one excuse - the rain stopped in the morning, the grass was not completely dry, and I decided that it would not be much worse if I rinsed the leaves, maybe wash off the spider bugs and snails. Moreover, somewhere I read that some Ivan tea is washed. I know that after the rain it was not necessary to collect, but they have been going on with us lately practically without stopping, and I have only two days off to collect. Yes, and realized late, there is no room for maneuver. I took a day on account of my vacation, and tomorrow evening I’ll rush to the dacha, so that there would be more time to prepare tea. If it doesn't rain, I'll start picking up the leaves, even though it's not worth doing this in the evening. Hunting is worse than bondage!
Citizen
Marina, and I always pick it up either in the afternoon or even in the late afternoon, and it’s not damp and the sun doesn’t bake like that. I envy you "in white" that I myself cannot rush to the training camp ...
RinaM

Igor, now I can't either, but we finally have a sun. I sit and jump. I keep my fists so that it would be dry both tomorrow and in the air!

I agree with Lyudmila, any tea, even the most spoiled one, should not be thrown away. Out of ignorance, I desperately burned my very first tea, it was a pity to tears, but I didn't throw it away, I poured it into the jar and into the table - this blackness. Found it after 9 months ..... or so, began to smell of caramel and something spicy ...... delicious, drank it all ...
Semblis
Citizen, Igor, yes, in general, I have found my paradise. I am ready to live in cans with dry tea. As the girls write, the smell of caramel, even a little creamy ... But in the process of fermentation, not at all. Last yesterday's experience. I dried the freezer. 4-6 hours the smell went, ran to the site, Lyudmila already wrote about 4-6 hours, right under the arm. She left it for the experiment for a longer time, it turned out 16 hours, when drying there is a little silage, just a little bit, on After drying, the hot smells very cool, expensive baking or something Indian, some kind of spice What is interesting is the mixed, dried leaf with increasing fermentation time becomes blacker, freezer is the same, i.e. all dark brown, regardless of the fermentation time.
Citizen
Well, you see, it means that everyone has their own nuances and subtleties, and therefore tea is different.

girls boys .. need help from the audience ..
After withering, the autumn fireweed will not be like the picture in the recipe ..
I had a night and a day in a diaper .. but .. I squeeze .. in a lump it seems to hold a little bit .. and a little crunch is heard .. but it's more scary to keep on withering .. I'm afraid that everything will dry out ..
Elena Kadiewa
Zhenya, twist it already! Fermentation at night, dry in the morning!
Poor girl, how much agony!
Everything will be fine!
Zena
elena kadiewa, Lenaaa ... thanks!

Girls, and someone tried to add a thread when brewing sangal dail? Who got what effect?
Zena
please tell me .. how to understand that the tea is dry in the oven ..

here is an excerpt from the recipe .. but this is how I understood it about cut leaf tea ..
Quote: lappl1
Well-dried tea has the color of ordinary tea, the tea leaves break when squeezed, but do not crumble. When the bulk of the tea reaches this condition, we take out the trays from the oven and let the tea cool down to room temperature.
I have granular ..
an hour and forty stood at 100 degrees .. and in 10 minutes it will be like an hour at 50 degrees ..
it feels like dry to the touch .. I squeeze the granule, it crumbles ..
Elena_Kamch
Zhenya, and rustles in the bag? I dry mine, then touch it, dry and crumbling, rustling. Then I leave it in the oven with the light on for a couple of days. Then I lay out

Is the effect by taste or by effect?
Elena Kadiewa
Zhenya, what layer? It says just about granular. Has the smell gone?

Added Thursday, 11 Aug 2016 09:12

I dry in the airfryer and fry at first
Zena
Quote: Elena_Kamch
Zhenya, is it rustling in the bag?
I turned off the oven .. cooled down to room temperature .. poured it into a bag and hung it in a dark place ... we have two refrigerators plowing the warmest and driest place .. it would be good on the balcony, but we have been disgusting for three or four days .. now damp and only 18 degrees ...
I went and listened, it seemed to rustle ..
Quote: elena kadiewa
Zhenya, what layer? It says just about granular. Has the smell gone?
Helen .. the layer was in one granule .. the first two times she turned over after 30 minutes .. then every 15 minutes ..
smell..
if you put your nose to tea at all .. you can feel a faint aroma of prunes ..
now weighed .. the raw material was twisted was 1 kg
and now after drying 400 grams

back to the oven to dry it ???
Elena Kadiewa
Well, okay, just control it so it doesn't get moldy

I always insure myself, I dry out a bit, but maybe this is the norm!

Well ... with your first tea! Heartily!
Zena
Thank you!
just for the first time it's not clear what it should be ..
then you probably do without looking ..
What flax did you dry yesterday?
RinaM
It rains in Gadyukino. (from)
Girls boys, how disastrous is it to pick leaves in rainy weather?
*Eve*
Lyudochka wrote that the rains are NOT useful only because they partially wash away the microorganisms that promote fermentation from the leaves ... But what can we do, in our Len region in August they can pour every day ... So, we need to collect. Look at your conditions to dry. My area allows, I sprinkle it for a while in a thin layer (stirring) to dry, and then I wither as usual. Success!
RinaM
*Eve*, Hope, Thank you! Consoled! I have plenty of room, although there is no problem with that.
Elena_Kamch
RinaM, Marina, I collected it in the rainy ... And what to do if rain and rain and fog ...: - Then at home I just half-dried it in the air, then dried it for a longer time in a swirling form.
Zena, Zhenya, with an initiative !!! It's great that you are with us!

What flax did you dry yesterday?
Which Lena did you ask?
If me, then no ... Tomorrow or the day after tomorrow I have planned an outing for the leaves. And in the freezer only a bag of macho floor lies. I'm waiting for my husband to have inspiration ... for creative mixing of the sheet
RinaM
Elena_Kamch, Elena, I am more and more filled with optimism! And then I was depressed in the morning. In the evening I will rush to the dacha, and right after Ivanushka, even in the rain!
I was here, just for fun, bought an umbrella hat, but it turned out that it might come in handy!
Elena_Kamch
RinaM, Marina, everything will be fine! Do not worry! Of course, I want to do everything in the right way, but now ... Life and the region are making their own adjustments and we need to adjust. We have, with the last rains, in general, fresh snow on the tops of volcanoes has fallen ... And I have not so much tea prepared yet
RinaM
Elena_Kamch, Elena, well, I will master the technology in extreme conditions! It's hard learning ... it will be easier next summer.
Beauty you have there! It's a pity, I only saw in the photographs.
Elena_Kamch
Yes, our beauty is good when I arrived, saw and left. And living here ... is quite extreme
Good luck with your preparation!

guys, I was again without light for almost a day, so forgive me for not answering in time. But I see that everything is in order - the "old ones" helped the "new ones".
RinaM, Marina, welcome to tea themes! Thank you for choosing our site for tea making.
I read about how you made tea. Yes ... In general, you have already been told what the problem is - washed leaves, pressure on mincing tea and freezing - all this influenced the fact that the tea has the smell that you described. After washing and freezing, there is a lot of moisture in the leaves, and excess moisture prevents fermentation. Most likely, it is not hot in your house either. Here tea and sour from excess moisture and cold. Even if your place is warm, there is still a lot of moisture. If there was no oppression, then there would be a chance to avoid the sour smell.
Quote: RinaM
Is it worth sending this tea to ripen, does it have a chance to become a real Ivan Koporsky tea?
Of course, it's worth sending it to dry fermentation. But the tea that you could have had if you had not violated the technology, it will no longer be. But it will be tea. Not what it could, but it will be ...
Zena, Zhenya, congratulations on your first tea! You did it! Well done!
RinaM
lappl1, Ludmila, yes, I made all the mistakes that were possible, I realized this when I knocked off all the sites and recipes, and already thoroughly settled here. I studied your recipe, and began to read the whole topic.
I arrived at the dacha under the ending rain, the night and morning promise clear. Maybe I'll have time to pick Ivanushka dry.

Today I "spent" my tea.
So far, we are drinking the one that one good girl treated us to (the harvest of the past and the year before last).
elena kadiewa, Lenkin,
So, despite the fact that I did the first time, that I collected only the leaves (already a little to a dot), it smells exactly the same as Lenochkin's last year with flowers. And 2 weeks ago there was no such smell.
At first I didn't even believe my own nose. My husband and I arranged an exam for each other with closed eyes, and neither he nor I could tell by the smell what tea was.
Does this mean that everything worked out for me? What a fine fellow, huh?
And how I was afraid, how worried! Lenka terrorized with questions
But it still worked! So, it was not in vain that she terrorized
Therefore, I know for sure that all beginners will succeed!
Good luck!

Sorry for the bragging rights, but I am so delighted with the result that it does not fit into me

Citizen
Olga VB, Olga, flowers are collected only for decoration, well, some for show-off. I agree that if several packages are prepared as a gift, then you can use the separately dried color for decoration. But it does NOT contain anything, neither a smell, nor those additional imaginary trace elements. For the production of honey, yes, but not for the production of tea leaves. Mr. LIST, yes, everything is in it. I am glad for you, with all my heart.

Olaaaa! how glad I am that everything worked out! Just a clever girl ... clever girl! Can you still break out somewhere and do a village one?
As for the flowers, I bet they give a light aroma when brewed, at least in my bag they Smell!

Oh, thanks, my dears!
I am proud of you!
And yourself!
Yesterday they brought me tea bags, I packed them for my husband to work.
Today he has already reported that the aroma is worth the whole cabinet!
Everyone who walks in asks why it smells so great
In general, I am happy as an elephant!
And all thanks to you - and Lyudochka, who taught us all this, and Lenochka, who translated some incomprehensible moments for me into the teapot, and everyone who inspires us to tea exploits with their example and tips!
Quote: elena kadiewa
Can you still break out somewhere and do a village one?
Oh, Lenochka, unfortunately, this season nothing will work for me: there is nowhere to escape, because my closest "familiar" garden is 550 km from home, and in the city limits, in Moscow, I will not risk anything to procure.

RinaM, Marina, but now you know how to make great tea. With everyone there are punctures, and even more so for beginners. Anyway, this tea will surprise you. You will see. Take it away and "forget" before winter. Just make sure you have it dry well.

Olga VB, Olya, and I guess who this good girl is.
Damn, I seem to have missed something interesting - how you made tea. Olenka, I congratulate you. how glad I am that you are glad. The fact that you have made tea is of course glad ... And the fact that you are delighted with the result ... As I understand you. And thank you to good girl Lena for sharing her knowledge and tea. And thanks to everyone who helped you with advice when you made tea.

Olga VB, Olga, flowers are collected only for decoration, well, some for show-off.
CitizenOh, Garik, well, I don't agree with that at all ... Flowers give such an aroma if they are properly dried in a dryer and then stored correctly. And if you ferment them, then ... Oh, try it - turn on a meat grinder and ferment. then you yourself will not believe what aroma you will feel. Although I am aware that you do not recognize a meat grinder. But then give it to someone. But you will recognize the aroma, which you doubt.

lappl1, Lyudochka,
RinaM
lappl1, Ludmila, thank you very much!
I was lucky with the weather, a little rain passed in the afternoon, I managed to pick leaves before it. They lie and dry. It's still a long way to readiness, you probably have to roll it up for the night.
lappl1
RinaM, Marina, well, that's good that we managed to collect the leaves. And for the night, of course, wrap it in a cloth. Though you will sleep peacefully, you will not need to stir.
RinaM
Ludmila, oh, I went into the hunt, having read all of you! The sky is clear, if it doesn't rain, in the morning I'll go for the second batch. It is a pity that the plantation is small. Only that Ivan tea that is in the shade, fresh and green with buds, a little of it was left by me unpicked. And the rest is already dry and fluffy.
