Cooking method

  • Typical taste for the Land of the Rising Sun. Having once tasted Japanese desserts, you can become a passionate admirer, or someone who even just looks annoying. For us it tastes unusual.
  • The cake consists of a sponge cake with matcha tea, mousse cream with matcha tea and mousse cream with anko paste, which has a pleasant nutty flavor. A very common combination for the Japanese is matcha and adzuki.
  • Azuki (or aduki, azuki, red bean, red mung bean, adzuki beans) is a legume.
  • By the way! Azuki can also be eaten raw. But other types of beans contain substances that are harmful to humans in their raw form, so ordinary beans must be pre-soaked and cooked for a long time.
  • Delicious desserts are made from red beans. In the confectionery industry, the most popular Japanese adzuki dish is wasagi. These are balls of rice with red bean paste hidden inside. Bean paste is also placed inside gingerbread cookies, cakes, even ice cream. Also, a drink like tea is made from red beans. To do this, the adzuki are germinated and boiled.
  • But the use of adzuki is not limited to this. The beans are sprouted and the sprouts are made into salads rich in vitamins.
  • I was looking forward to a special package from the adzuki. I just wanted to taste it in dessert and other dishes. The flavor difference between the Azuki variety and our red beans, I never caught. It is small in shape, with peas. The photo is clearly visible.

  • Put the pan on the fire, when the water boils, put the beans in a colander and again pour water in the same ratio. If the water boils away, be sure to top up. Salt. The beans must be constantly covered with water. Cook the beans for about 1-1.5 hours over low heat. When the beans are very soft, drain off the remaining water.
  • For decoration, choose the most beautiful beans and set aside. Fold the beans into the chopper, add the powder. Purée. If the mass is dry, then add a little broth in which the beans were cooked.
  • Balls are easily formed from the finished paste.

  • Anko can be stored in the refrigerator for up to a week. For longer storage, transfer the paste to a plastic container or cling film and store in the freezer.

  • Combine the yolks with sugar and beat until light cream. Pour into the milk mixture, stir with a whisk and temper to 85C. Remove from heat. Pour in the gelatin and stir. Allow to cool at room temperature.
