Superwoman's Bread

Ingredients

water 400g
wheat flour 720g
whole grain flour 200g
rye sourdough (I have rye sourdough - a semi-finished product from Viki) 400g
kvass wort 80g
brown sugar 40g
bitter orange (grind) 6g
ginger (finely grated) 4g
cardamom (grain) 4g
cloves (chop) 2g
fresh yeast 20g
salt 20g
raisins 180g

Cooking method

  • Soak the raisins in water for about 1 hour.
  • Knead all ingredients except salt and raisins in the bowl of the food processor for 10 minutes. Then add salt and knead for another 5 minutes.
  • Drain the raisins and add to the dough. Continue kneading until all the raisins are evenly distributed in the dough.
  • Let the dough rest for 2 hours. At the same time, "stretch-fold" dough after 1 hour.
  • Then put the dough on the table and divide into 3 parts. Let it rest under the plastic for about 15 minutes.
  • Then shape each piece into a loaf and place in the proofing basket, seam up. Proofing for 1 hour (In the original, several hours, but as for me, this is too much.)
  • In the meantime, preheat the oven to 260C.
  • Turn the finished bread, make cuts and place in the oven. Reduce the temperature to 220C. Bake for the first 15 minutes with steam. Then remove the steam and bake for another 25 minutes.
  • Cool the finished bread.
