Ingredients

Dough:
dry yeast 4 g
wheat flour c. from. 170 g
milk 135 g
Dough:

salt 4 g
sugar 40 g
yolks 68 g
sour cream 20% 65 g
butter 40 g
Additionally:
yolk 1 PC
milk 1 tbsp. l

Cooking method

  • Dough:
  • Heat the milk until hot (do not bring it to a boil) so that it smells of boiled milk, pour it into a thermos and stand for 30 minutes, then cool until warm.
  • Mix flour with yeast, pour in warm milk. Stir and leave to ferment at room temperature for 40 minutes.
  • Dough:
  • Add salt, sugar, yolks, sour cream and 160 grams of flour to the dough. Knead for 7-8 minutes.
  • Add softened butter and remaining flour.
  • Knead a soft, non-sticky dough. Leave to ferment at room temperature for an hour and a half.
  • In the middle of fermentation, stretch the dough and fold in an envelope. Fold the resulting rectangle in an envelope lengthwise.

  • Divide the dough into the required number of equal pieces (I have 5 pieces).
  • Roll each piece thinly and roll into a roll along the short side.
  • Form a braid.

  • Proofing under a film at a temperature of 27-28C degrees for about an hour.
  • Before sending to the oven, grease the braid with a mash of yolk and milk, sprinkle with poppy seeds.
  • Bake in an oven preheated to 220C (convection 200C) degrees with steam for the first 7-8 minutes, then lower the temperature to 190C (convection 170C) degrees and bring the bread to readiness.
  • Cool the finished bread completely on the wire rack.
