Cooking method

  • I bake this sourdough bread with my changes, so I cannot name it as in the original and I allowed it to be placed in a separate recipe (at the discretion of the moderators)
  • The sourdough must be fed the day before, preferably, if not used for several days, twice. Then I take 20 g from the fed, live sourdough and feed it with 60 g of water + 60 g of flour. If the starter culture is active, it should rise in 4-6 hours every three times.
  • Yeast is activated with a little water and flour -15 minutes.
  • I kneaded the dough (without salt) in a planetary mixer for 3 minutes at first speed, rest for 30 minutes, then at second speed for another 7 minutes, added salt in the middle of kneading.
  • Fermentation -1 hour at 28 ° C and then in the refrigerator for 2 hours at 4 ° C. This is not necessary, you can just hold it for 1.5 hours until it doubles, but I think that this has a positive effect on molding.
  • Formed bread: divided the dough into two equal parts, 380g each. From one it formed a ball. The other was again divided into two parts, 190 each. She rolled out two bundles, the length of the diameter of a large ball. I put them one on top of the other and tied them in a knot. She put a large ball on top and connected the ends of the bundles on it.
  • Proofing in a basket with a seam top for 1.5 hours.

  • She baked in an oven preheated to 240 ° C for the first 10 minutes with steam, then removed the steam and reduced the temperature to 220 and baked for another 35 minutes.
  • In my oven, it's difficult to get the bread to bake evenly.
  • You don't want to cut this bread, you just break it into buns ...
  • But I tried to take a photo in the section, it turns out all the time as if in stripes, most likely this is due to the molding. The crumb is finely porous, but at the same time very soft and the bread, when squeezed, takes its shape again.
  • Its crispy crust makes it delicious.

Note

I bought this bread because of its molding. But it turned out to be so delicious that it never lived up to the photo session. Finally I was able to photograph him.
I add yeast so that I don't feel acid in the wheat bread. It also increased the water in comparison with the original, bringing the hydration to 70%, and reduced the amount of salt.
If someone needs to bake this bread without yeast, bake according to Irina's recipe, replacing the pulish for sourdough. The time of fermentation and proofing will have to be looked at on the dough.
