This is the second attempt to bake this bread. The first was unsuccessful. Three months ago, when I just bought the oven and there was absolutely zero experience, I tried to bake on the "Pastry" mode. The result was disastrous! The dough was fermented in the last proofing, the loaf "collapsed", it smelled disgusting of yeast. On the "Pastry" program, the third workout and proofing were superfluous! And with the balance of flour - the liquid muddied. I took into account the mistakes of the past. The mode I chose "Classic", the time of the last proofing was adjusted manually. Gingerbread man classic, wheat. Yes, and still, it is better to put on a light crust. On average, the bread was already very fried. And so, if something does not work out, look for mistakes not in the recipe, but in your own actions. And many thanks to the author !!! Lovely sweet pastries!
