Polenta pie with four types of cheese

Ingredients

Polenta
Coarse corn grits 300 g
Salt 1 tbsp. spoon (no slide)
Water 1.5 l
Butter 75 g
Tomato sauce
Olive oil 3 tbsp. spoons
Garlic 2 cloves
Rosemary, thyme pinch
Canned tomatoes 800 g
Salt, pepper, sugar taste
Gorgonzola cheese * 200 g
Talejo cheese 250 g
Mascarpone cheese 250 g
Parmesan cheese 100 g

Cooking method

  • 1. In a saucepan with a thick bottom, boil 1.5 liters of water and add salt. Pour in a thin stream of corn grits, stirring vigorously for 1 minute to avoid the appearance of lumps. Reduce heat and simmer at medium boil for 40 minutes, stirring every 5-7 minutes to prevent sticking to the bottom. Then add butter and stir.
  • 2. Transfer the polenta to a baking dish (polenta should only fill half the form). Allow to cool completely.
  • 3. For the tomato sauce, heat the olive oil in a saucepan and lightly fry the chopped garlic (I put it through a press). Add rosemary and thyme, then chopped or puréed tomatoes. Add salt and pepper. I made with fresh tomatoes, so I added sugar and vinegar. In general, spices to taste. Boil, stirring occasionally, until the mixture thickens.
  • 4. Preheat the oven to 180-200about C. Place the cooled polenta on a board and cut into 2 pieces (i.e. 2 cakes). Pour half the tomato sauce into the vacant mold, add half the polenta. Top with diced (or grated) cheese (leave half the Parmesan). Top with the other half of the polenta, top with the remaining tomato sauce and sprinkle with Parmesan. Bake for 30 minutes.

* I wrote all the ingredients as in the original recipe. In practice, I put any cheese at hand and in whatever quantity I want. This time it was dump, parmesan, Hochland cream cheese and a small piece of dor blue. Each time it tastes differently. I have a family of raw foodists (that is, we love cheese very much), so for us it is one of our favorite and often cooked dishes. Try it! Maybe you will like it.
