No, the oven is not defective, you just need to knead the dough tighter in these modes and I advise you to add literally a handful of oatmeal or other flakes for the bran - try it, I think it will help. This is the only thing I do myself - I definitely add flakes to the bran, - they will remove excess moisture and the bread will not fall off.

So I was offered to replace it with another without any problems. Unfortunately, this model was nowhere to be found - I really liked that there you can bake two different breads at the same time. I had to pay extra - in the end I bought a stove twice as expensive as mine was. True, now I already know that I will bake bread. I took my first stove without being sure that I would use it.
Now I bought a Stadler - at first impressions, the quality of the bread is better

bought my own bread maker for baking rye bread. I have my "own program" set up like this:
kneading 1 - 14 minutes
ascent 1 - 60 minutes
kneading 2 - 5 minutes
ascent 2 - 2 hours
ascent 3 - 2 hours
baking - 120 minutes (in our oven, the maximum baking is 80 minutes. After the end of the program, you have to put several times on "baking", which, for some reason, is only 10 minutes.)
recipe:
500 ml of warm water, 1 Soviet glass of sourdough, about 700 g of flour (personally, I have: 100 g of whole wheat flour + 535 g (+ -) rye flour), 3 tbsp. tablespoons of granulated sugar, 2.5-3 tsp of salt, 3 tbsp. spoons rast. oils. (I also put rye bran - 2 tablespoons, after soaking them in boiling water (a small amount so that the bran swells) from 500 ml of water according to the recipe).
bread yield - 1 250 gr (+ -).
"own program" - 6 hours 35 minutes. the crust is dark.
I bought a second-hand bread maker at Avito in October 2013. I bake bread 2-3 times a week. rye bread is heavy, but the bread maker kneads the dough well, the pins are in place, do not fly out, the stirrers and the bucket are not scratched.
in a small form (one half) I cook condensed milk. I don't use a double bucket for baking bread. there is no way to use a double bucket in my bread maker, becauseBecause, it lacks a detail on the bottom in the back side, and only one stirrer in one bucket turns. but, despite the fact that only one 500-gram bucket is working, and the second is simply empty, the bread maker is working properly, the condensed milk is excellent! I cooked condensed milk on the "jam" mode. also, in one 500-gram bucket, I was kneading a tough dough for dumplings made from whole wheat flour, which was even difficult to roll out on the board itself, but my bread maker kneaded everything great!
on the "cake" mode I baked a manna several times. but in a large bucket the manna turned out like a pancake (it is too bulky for a small amount of products). Moreover, I do not pull out the stirrers before baking the product, so the mannik still tore when I pulled out the stirrers with a hook. I don't use other programs now. used to bake rye bread with yeast in the first 3 programs. then I gave up the yeast, grew my own sourdough and programmed "my program."
