What is put in meat dumplings, for taste?

One year we had a lot of prepared mushroom caviar. And I decided to try adding it to minced dumplings
Then I added it often. It is delicious.

I add a lot of onions to the minced dumplings, and dry adjika (as in "Magnets" in the Kuban is sold)

Put nothing in meat, salt, pepper and onions.

Why not put it * Siberian dumplings have such a filling (as an option). My son-in-law (he is a Siberian) cooks this way at home, but I love the classic version.

1) You can add very finely diced raw potatoes to the minced meat dumplings. Not grated, but cut into cubes.

This is how manti is made in Uzbek-st, it happens instead of potatoes, pumpkin is added, and of course cumin, coriander in grains

Why an egg in minced meat, for dumplings !? The egg holds together, I don't like it when the minced meat is in a bun in dumplings ... I like soft, crumbly, I add milk instead of water
