Ingredients

Pork meat (shoulder or brisket) 1500 gr.
1 glass = 200 ml.
soy sauce (I have Kikkoman) 1/2 cup
ground white crackers 1/2 cup
grind the pulp of the bread in a blender 1/2 cup
fresh rosemary (chopped) or 1 tbsp. l. dry 2 tbsp. l.
pink peppercorns 1 tsp
coriander 1 tsp
ground black pepper or paprika to taste
garlic 5-6 teeth
bay leaf optional 2-3 pcs.

Cooking method

  • I don't know about you, but I really love to bake meat in a whole piece, especially pork! The recipe that I want to offer you bribed with its simplicity, accessibility, and of course, amazingly tasty result! I highly recommend it - try it!
  • PS I warn you in advance that thanks to soy sauce, meat is cooked absolutely without salt.
  • For this recipe, I used pork belly, but not very fatty, but with streaks of bacon.

  • Use a sharp thin knife to make punctures through the entire piece of meat, pour soy sauce mixed with paprika or pepper into a container, place the meat in it and lightly press it first on one side and then on the other side so that the meat absorbs the sauce like a sponge. place for a couple of hours in the refrigerator, be sure to turn the meat, after half the time, from one side to the other.

  • Pour crackers and bread crumbs into a spacious plastic food bag, place a piece of meat marinated in sauce there and shake well so that the meat is nicely and evenly breaded. Lightly grease the baking dish with vegetable oil, place the breaded meat in it, sprinkle it with generic pepper, rosemary and coriander on top, add bay leaf and unpeeled but crushed chives, cover with cling film and place in the refrigerator for at least 4 hours, or better at night.

  • Remove the cling film and close the mold tightly with foil. Bake in preheated to 190 "C oven for 1 hour (baking time depends on the thickness of the piece of meat, its type - brisket or shoulder blade, fillet or ham), remove the foil and bake for another 15-20 minutes until golden brown. Focus on your oven. !
