Foie gras lollipops

Ingredients

foie gras (ready-made) 400 g
For beet chutney:
boiled beets 200 g
bulb onions 1 PC
Apple 1 PC
sugar 2 tbsp
dry red wine 150 ml
cinnamon pinch
salt pepper taste
gelatin 10 g
olive oil for frying
For mango chutney:
mango 1 PC
light honey 2 tbsp
fresh lime juice
fresh ginger root (grated) 1 tsp
carnation 2-3 pcs
white wine (CHARDONNAY) 50 ml
salt pepper taste
gelatin 10 g

Cooking method

  • 1. For beet chutney, cut the onion into small cubes and fry in olive oil until transparent. Add diced beets and apple, pour in 100 ml of red wine, add sugar and simmer all together for 10-15 minutes. Season with salt, pepper and remove from heat. Purée with a blender and return to a saucepan. Add the gelatin dissolved in the remaining red wine. Warm up without boiling and cool to room temperature.
  • 2. Prepare mango chutney in the same way with the above ingredients. Soak gelatin in white wine.
  • 3. Cut the foie gras into slices 0.5-0.7 mm thick. Top with the beetroot and mango chutneys and set.

  • 4. With the help of round molds with a diameter of 4-5 cm, cut out "lollipops" and put them on wooden skewers. Serve with croutons.

On New Year's holidays, I want to pamper my loved ones with something unusual. This appetizer is quick enough and not difficult, chutney can be prepared in advance, but the gelatin must be added just before collecting the "candy".
