Hazelnut bread with dried fruits

Ingredients

Assorted dried fruits (dried apricots, figs, dates) 100 g
Banana 1 PC
Walnuts 60 + 30 g
Butter 130 g
Sugar 100 g
Liquid honey 2 tbsp. l (30-35 g)
Eggs 2 pcs
Wheat flour 1c 225 g
Baking powder 1 sachet (10 g)
Cinnamon 1/8 tsp
IMPREGNATION
Sugar syrup 50 ml
Rum 10 ml

Cooking method

  • Assorted dried fruits (I have dried apricots with dates 1: 1), wash, dry and finely chop.
  • Cut the banana into cubes.
  • Chop 60 g of walnuts, dry in a frying pan without fat (I just chopped).
  • Heat the oven to 160 ° C and cook the dough.
  • In a deep bowl, grind softened butter with sugar and honey, beat in eggs. Beat the mass with a mixer. Sift flour from baking powder and, mixing in portions, knead the dough. Add a pinch of cinnamon, chopped dried fruit and banana. Place the dough in a baking dish and flatten. Sprinkle with coarsely chopped walnuts (30 g) and bake with convection for 1 hour.
  • Put the finished loaf on a wire rack and let cool.
  • Soak the loaf with sugar syrup and rum, if desired.
