During the cooking process, I did not freeze or cool anything, the speed on the blender left the middle third, I just poured everything into the jar and, like with egg mayonnaise, began to beat without moving the blender's leg, and then gradually grabbing the oil from above, then added vinegar and beat again literally a few seconds.
There was no milk powder in the house, so I made mayonnaise on dry vegetable cream, which I use during fasting, so my mayonnaise turned out not only without eggs, but also lean. Vegetable cream may not be as useful as regular cream, but this version of an easy-to-prepare yet tasty lean mayonnaise will soon come in handy.

Cream 75 ml, ready-made mustard 0.5 tsp. (it was no longer easy, I scraped this one over a jar), salt 0.5 tsp, sugar 0.5 tsp, ground black pepper, Chumak sunflower 150 ml, vinegar 1 tsp. l.
And here is the result

My conclusions: cream definitely tastes better than milk.

Powdered milk 20 grams was stirred with water to 75 ml, added salt, sugar, mustard and even accidentally plopped vinegar right away (I was afraid that now there was another failure), 150ml (135g) of sunflower oil, I laid everything right away, put the blender's leg and did not lift it until emulsification did not go.
I added black pepper, 2 cloves of garlic and got a mayonnaise close to the creamy garlic sauce for "Calve" meat. It is very tasty and tastes different from mayonnaise made with fresh milk.
Maybe a little bit of creaminess is missing, so I will try it with dry cream or sour cream.

In general, the oil I had was not very good. good (liquid), at first he did not think he would thicken with me, but I remember that the girls froze this mixture slightly, put it in the freezer for 30 minutes, did not have time to lower her leg - it became thick, white! I think 10 minutes would be enough. And so it looks like a store, but tastes much better. All right, now there will be no shop in the house at last !!! Thanks again to everyone for the advice!
