Ingredients

Viburnum, bright red berries 500 g
Sugar 500 g

Cooking method

  • The hardest part is finding the bright red viburnum berries. Ripens in September-October. Can be collected in December as well, if your vehicle can get through the snow. The berry is only better from frost.) Winter berry is good in that it is freed from excess moisture by the cold and the juice is thicker and more saturated.
  • In the 20th century, it was unfairly forgotten because of its nasty bitter taste. But I know that it grows abundantly on the banks of abandoned villages.
  • Washed berries without leaves and debris 1: 1 with sugar are loaded into a "juicer" over low heat. The resulting juice without berries is bottled and canned.
  • This concentrated thick juice is used as a syrup in dessert dishes, or diluted with water to taste (after boiling, the bitterness disappears, and the taste approaches honey).

And I grind it through a sieve and add sugar. I store it in the refrigerator. So in bitterness and good.
