This is a delight! I followed the recipe by 90%. For the first time I did it on water, olive oil, today I baked it for the second time, on whey, added a couple of tablespoons of flaxseed flour and less wheat flour, replacing it with whole grain. Now I will only bake it!

During the mixing process, this smell became very weak. I shaped the bread after the first proofing, did not leave for the second, I was afraid that it would ferment. In general, the bread turned out, I'm happy with the crumb. But there is sourness in the taste and smell. Is that how it should be in such loaves? Alternatively, you should try to reduce the amount of yeast. Used 2 grams of dry yeast.
I have plans to try the bread on the old dough, but I am already a little afraid.
