Whole wheat bread with sun-dried tomatoes

Ingredients

Dough:
whole grain flour 120g (1 glass)
white wheat flour 140g (1 glass)
dry yeast 10g (1 tablespoon)
honey or brown sugar 3 tablespoons
warm water 350 ml (1.5 cups)
Dough:
sunflower seeds 3 tablespoons
sesame seeds 2 tablespoons
flax-seed 1 tablespoon
whole grain flour 240g (2 glasses)
white wheat flour 280g (2 cups)
warm water 200ml (3/4 cup)
salt 15gr
vegetable oil from a jar with sun-dried tomatoes 3 tablespoons
sun-dried tomatoes 15 pieces from a jar of sun-dried tomatoes in oil.

Cooking method

  • Cooking dough.
  • 1. Sift white flour and whole grain into a bowl.
  • 2. Add dry yeast and mix.
  • 3. Mix honey with warm water, pour into flour, mix well so that there are no lumps, cover with a towel and put in the oven with the light on for 60 minutes, so that the dough doubles and becomes spongy.
  • Cooking the dough.
  • 1. Pour all the grains into a dry frying pan and heat for 3 minutes. Remove the pan and cool the grains.
  • 2. Sift both flours, salt into a mixer bowl, mix.
  • 3. We make a hole in the flour and pour in the dough, warm water, oil, add the grains. Mix with a spatula.
  • 4. 5 minutes mix the dough with a mixer at medium speed. At this time, cut the tomatoes sun-dried in oil into pieces and put into the mixer.
  • 5. Grease a large bowl or saucepan with vegetable oil. We transfer the dough from the mixer, make a ball out of it, coat it with vegetable oil, cover it with a towel and put it in the oven with the light on for 90 minutes, so that the dough rises by half.
  • 6. Grease two forms with vegetable oil. Divide the dough in half, knead, transfer to molds, oiled with vegetable oil by hand, knead in molds to fill them well.
  • 7. Cover with a towel and put in the oven with the light on for 90 minutes for the dough to rise.
  • 8. Heat the oven to 200 gr. We put a deep dish with hot water on the bottom. Grease the dough in molds with vegetable oil and
  • bake for 15 minutes in the middle of the oven on a wire rack.
  • 9. Reduce heat to 180 g and bake for another 35 minutes. I took the bread out of the mold at the end, turned it upside down and baked for another 10 minutes.
  • 10. Remove the bread from the oven, wrap it in a towel so that the bottom is open and leave to cool on the wire rack.

If the bread is in the oven, I insert it into the bread, when the crust has already hardened, it will turn reddish so that the temperature probe stands in the bread and does not fall. The temperature is measured gradually, as it rises in the bread, and until it reaches 94-96 * C - the bread inside is ready, you can safely take it out.
If in a frying pan, in a pan during cooking, then the temperature is measured quickly, you stick it in and it rises quickly, showing the actual T * in the product.
Or, for example, you can attach it to the edge of the pan (while boiling milk, water) and will also show T * as it increases.
