Ingredients

biscuits 1 pack (small)
ice cream creamy 200 g
cream 33-35% 300 ml
powdered sugar 7 tablespoons
fresh strawberries 150 g
berry assortment for finishing 200 g
gelatin 20 g
sour cream 25% 50 g

Cooking method

  • Put the biscuits in a 26 cm split form and moisten with warm milk. 50 g ice cream, 150 g cream, 150 g strawberries and 4 tablespoons of powdered sugar, beat in a blender. Soak 10 g gelatin in 30 g hot water, dissolve and add to the whipped mixture. Pour the cream over the cookies and refrigerate for 1 hour. Then prepare a second layer of soufflé. 150 grams of ice cream, 150 grams of cream, 50 grams of sour cream, 3 tablespoons of powdered sugar, beat. 10 grams of gelatin dissolve in 30 grams of hot water and add to the mixture. Pour a second layer on top and refrigerate for an hour. Then take out and garnish with fresh berries.

I tried this recipe today.
Gelatin, after being added to the mixture, froze in lumps, so it turned out to be something liquid.
I understand that this is because the ice cream soap is very cold and the warm (not hot) gelatin set too quickly.
what did I do wrong? maybe the ice cream had to be melted first?
