Ksyusha, I don't have a Scarlett SC-400, but I baked milk!
Scarlett SC-400. Milk bread
Scarlett SC-400. Milk bread
I baked on "Main" (time 3 hours), and it seems to me that there is not enough airiness in my bread, as if it was not enough.
Somehow, once I didn’t like "French", or maybe in vain? Next time I'll try it.
And the bread turned out to be tasty, aromatic, I want to say - solid, satisfying !!!
Thank you, . We will bake some more!
Omela
Olya, a beautiful bread turned out. He is my favorite from HP. Did you bake on the main program right away? I now knead for 5 minutes, turn off HP, leave it for 30 minutes, then turn on the Basic from the beginning. And in French my roof is falling.
Kras-Vlas
Thank you Ksyusha ! Yes, I did it right away on "Basic". I will try your way next time, but not soon: we do not have time to eat - there are few eaters!
natsik
Omela, tell me please, a very green baker, how can you replace ghee? I don't have this, and you can't find it in our stores. And another question, if instead of pressed yeast to take dry yeast Saf. moment, do they need to be poured into flour or should they also be mixed with sugar in advance?
Omela
natsik , welcome to the forum! Use butter instead of ghee. By the way, I don’t buy in the store, but I heat it myself. Dry yeast into flour.
natsik
Omela, thank you very much for the quick response, I will definitely try to bake such a bread one of these days. Then I'll write how it happened.
Omela
Good luck!
natsik
Now, finally, I dared to bake this bread. Here is the result. Not ideal, of course, but, in my opinion, not even bad.

Did not wait until it cooled completely and cut it while still warm

I bought a scarlet chera bread maker, today I want to try to bake bread))) I stopped at your recipe. This is my very first time, exciting))) But I do not have fresh yeast, tell me dry yeast, how much is needed instead of 8 g fresh? Thanks in advance.
zhemchik
Help!!!! I put all the ingredients exactly according to your recipe (liquid, dry on top). Almost 2 hours passed, and the bread maker did not even stir anything. The flour still lies on top, no liquid is visible. There was noise, it was disturbed by some kind of vibration, while the ingredients did not even move (((What to do?

check, did you put the spatula?, if not, then open it and stick it
nothing wrong
Vlad9869
Hello girls)) The same girls mostly))
In general, such a problem.
Scarlett bread grinder.
Recipe;
Dry yeast 1.5 tsp.
Wheat flour 500 g
Sugar 2 tbsp. l.
Salt 1.5 tsp
Vegetable oil 3 tbsp. l.
Kefir + water 320 ml
Adapted for 750g.
The gingerbread man is not thick, not liquid. In other words, it tries to stick to the walls but does not stick.

Several times it turned out to be excellent bread, it rose right up to the very lid.
Now it rises only 2/3 of the bucket and stops there. In the worst case, half a bucket.

I tried to change the ratio of kefir to water, the result is 0.
I tried to stop the program after the first batch 0.
I changed flour, also 0.
I changed the yeast, again 0.

Yes, the program is basic.

How much dry do you need instead of 8 g fresh? ...
zhemchik , Dry active is 3 times less.

Quote: zhemchik

The noise was, it was interfered with by some kind of vibration, while the ingredients did not even move (((What to do?
Most likely, the mixer was not dressed. Or a factory defect.

Vlad9869, welcome to the forum! You understand, there are no miracles. Since this recipe made bread, but now not, then there is a reason. The most obvious is yeast. Which ones did they change? How long did the program stop?
Vlad9869
Yeast: active saf-levure. Opened another pack from the same batch.
Stopped for half an hour.
Today I tried wheat rye. the same recipe only added 25% rye flour and a spoonful of kvass wort concentrate.
Very tasty, lush. But I went up all the same by 3/4 of the bucket.

I’m starting to think that it’s not about the yeast, but the amount of flour. Every time I pour it on the eye. But about all early, about 2 mugs.
I think 2 spoons will not give a rise of 5 cm?
Omela
Vlad9869, it's the saf-levure yeast !!!!! They require a different approach, and the quantity is calculated differently. Take a Saf moment.

Quote: Vlad9869

Every time I pour it on the eye.
You can pour as you like, the main thing is to keep track of the flour / liquid balance. Do you observe the "Kolobok" rule ??
Vlad9869
Duc kolobok to all koloboks kolobok)))
Saf the moment I'll buy tomorrow. I will try.
I tried today, with the second batch, to knead rye with wheat flour 50x50, the brick came out
Almost did not rise, well, 2 times in total. But tasty and texture like normal bread. This time everything seemed to be in order with the kolobok, and then it was as if water had been poured into it at the very end. Instead of a crust, bubbles))

Bugaga, yes, they did not post a mixer))) even embarrassed that bread would be baked with her))) As a result, we put it + once again first)) Strangely enough, the bread turned out to be excellent according to this recipe, even for people like us) ))
Omela
zhemchik , CONGRATULATIONS!!!
Vlad9869
I am reporting that it is probably not a matter of yeast. although on the safmomente a little better.
Today I added kefir which stood for a couple of days. the dough rose just disgusting.
Maybe it's the acidity of kefir ???
zhemchik
But what are these experiments for, if the author has already given a recipe for an excellent dough? We are doing only according to it and are not going to change anything, the result is excellent, much better then)
Vlad9869
Duc is practically the same recipe, and the experiment is always interesting. And the same bread will quickly get bored. Mine are tyrannizing me about onions, with seeds and raisins, even though I have a schedule)) But I haven't made it to rye yet, there is no gluten.
With milk powder, the dough rose perfectly today.

zhemchik , CONGRATULATIONS!!!

And can I ask you for a recipe or a link to the recipe for the stump in this bread maker?
Omela
zhemchik, I did not bake cake in this HP, unfortunately I would not recommend it at my dacha.

Vlad9869 , in fact, aged kefir is the very thing for bread. Let's all the same with the exact recipe, what and how was measured in this topic: Help with bread, nothing works. Let's figure it out.

Scarlett SC-400. Milk bread
Here's what happened ... It doesn't look like the photo on the first page ... This is the second attempt at baking. The first time I did it according to a recipe from a book.
So what's wrong?
Followed the recipe. Dry yeast. No milk powder was added.
Outcome:
1. Bread turned out in half a bucket. Perhaps this is not enough? Judging by the photographs, it should be in the whole bucket with such a quantity of ingredients ...
2. The top crust is cracked.
3. The side crusts are ooooooooo tough. They can hardly be cut with a knife.
4. Well, and so the crumb looks nirazu not airy ... but some kind of flattened ...

What's wrong with me?:) Where are the errors ...
Vlad9869
I had the whole problem in the amount of yeast, I added 1.5 scoops and was piously sure. that the yeast will multiply during this time.
I began to put 2 measuring spoons, sometimes it jumps up to the lid.
Well, the bun should not stick to your hands and at the same time not be too tough.
Omela
XG11GX , welcome to the forum!

To understand your mistakes, you need to familiarize yourself with the theoretical part of baking bread in KhP: #.

Visually, the dough was overly tough. Plus the yeast could fail.

Here's a second experiment on your recipe. Everything worked out!
This time I bought milk powder. And put dry yeast at the direction of the yeast manufacturer.
it turned out about 4-4.5 g of yeast for 380 grams of flour.
By the way, in the process of the second batch, I had to add flour ... one side of the bun stuck to the wall and did not interfere ... I added flour like everything is fine.
The result is this beauty.
Thanks for the nice recipe :)
Omela
Congratulations on your lucky bread! Glad you did it !!
kristik
Thank you very much for such a wonderful recipe! The bread is just SUPER! Very tasty! For the first time I even tried a delayed start on it, although everything was scary before that nothing would work without my participation! Thank you!
Omela
Kristina, I'm glad you did it !!!

Omela Oksana, hello dear. How are you? You, everything create your masterpieces. Good luck in everything and always.
Ask if I want it without milk powder? Or should you replace it with regular milk? How many ml if possible?
Thank you. So you want homemade, delicious bread in our city (you can't buy milk powder). Is the yeast "live"? Pressed?
Omela
Kate, thanks for the "masterpieces"! Pressed yeast in the recipe. Powdered milk gives the bread more luster, not a substitute for ordinary ones.
Lanier
Oksana, okay. Thank you. And what to do with yeast? Pre-diluted with sugar? Good luck.
Omela
Kate, the recipe says:

Grind yeast with sugar and leave for 10 minutes. Pour HP into the bucket.

Yesterday I received my HB, today I baked your bread as a singing deed. I added everything as in the recipe, the only thing I had to add was 3 tbsp. l. flour so that the bun does not stick to your hands.
Here is the result, maybe not quite what you need! But for me it is very tasty and kind of beautiful))

Today our shops are closed, it’s a holiday, there was no bread at home
And I baked one cake in KhP, decided to make bread quickly, quickly found this recipe, put everything in a bucket, but the oven did not turn on
I dumped everything in a bowl, kneaded it with my hands, set it to stand, an hour later I went to crush it, tried HP, turned on. Apparently hot in a row did not want to work.
I put everything in a bucket again, put on a quick program, it turned out to be wonderful bread.
Tall, lush, soft.
Thank you
As always....
