Biscuit:
Eggs 10 pcs. / 600 g
Sugar 1.5 tbsp. / 300 gr
Flour 2 tbsp. incomplete / 300g
Vanillin 1 g
Cognac 150 g
Dry cranberries 100 g
Cherry dry 150 g
Dried apricots 150 g
Cashew nuts 200 g
Walnuts 200 g
Ganache:
Sweet cream 35% 450 g
Cognac 50 g
Black chocolate 150 g
Milk chocolate 300 g
Charlotte cream:
Milk 400 g
Sugar 200 g
Eggs 4 things.
Vanillin 1 g
Butter 400 g
Syrup:
Water 50 g
Sugar 25 g

Cooking method

  • Biscuit:
  • We need to bake a biscuit that can be cut into six cakes. Therefore, I bake two biscuits in a Ø 26 cm shape.
  • Beat eggs with sugar until firm and add flour gently.
  • Pour the dough into a mold and bake according to the instructions for your oven. I have it 45 minutes at a temperature of 150⁰ C.
  • Ganache:
  • Ganache for the layer. Heat the cream and dissolve the black and milk chocolate in them.
  • Cool to room temperature.
  • Add 50 g of cognac and refrigerate. The ganache should be as dense as cream.
  • Wash the berries, cut them and put the remaining cognac in bowls.
  • Leave it for a maximum of two hours. We don't need an alcoholized berry. We just give it a taste.
  • Fry the nuts.
  • Cream:
  • Cooking Charlotte.
  • Boil the milk and add the egg-sugar mixture with the addition of vanillin. We have vanilla cream, so we add a lot, at the rate of 2 grams per 3 kg of finished product. This is 1/3 sachet.
  • Bring to readiness, cool and whisk with butter.
  • Syrup for impregnation:
  • Boil water and sugar. Cool and add liquid from our berries.
  • Assembly:
  • Soak the cake lightly. Grease with cream and sprinkle with cranberries.
  • Cover with a crust on top, saturate, layered with ganache and sprinkle with cashew nuts.
  • Place the third cake on top, saturate, grease with cream and sprinkle with dried apricots.
  • Place the fourth cake layer, soak, layer with ganache and sprinkle with walnuts.
  • Cover with the fifth crust, soak, coat with cream and lay the cherry.
  • Top with a sixth biscuit and coat with the rest of the cream.
  • Put in the refrigerator for six hours.
  • The cake can be decorated with 50/50 chocolate and butter. Will match well.

Note

The cakes should not be heavily soaked as they are thin.
