I don't quite understand how many batches should be? And in general, is there any fundamental significance in the number of kneads for sourdough bread?
I have a French bread mode for 5 hours and I'm afraid that the bread won't have time to come up .. I think it's easy to manually knead the batch, hence the questions)

It is very difficult to bake sourdough bread on the automatic program. Even in programmable CP, it is necessary to visually monitor the fermentation process. In this case, the first batch should be very short 3-5 minutes on any program. Then turn off the HP and leave it for 2 hours. Then you can turn on the "Dough" mode and, after the end of the program, leave it for spreading and then turn on the Heating. Because in your French mode the sourdough dough won't rise in 40 minutes. IMHO.

And I will also add that they bake in different CPs and the time is different in the program. I have not had Panasonic for a long time and the time of the French program is less, namely 3.35 per 1000 weight. And after the first kneading on the short program, I leave the dough alone for about 2 hours and then turn on the French bread.
It turns out a little shorter. But if the dough lasts a little longer than 2 hours, it's not scary. The main thing for him is to survive. And this is evident from the test itself.
