Coffee cake with prunes and nuts (lean)

Ingredients

flour 250 g
ripper 1 dec. l.
strong coffee (I have Espresso) 1 stack. (250 ml)
sugar (preferably brown) 1 / 2-2 / 3 stack.
honey 2 tbsp. l.
prunes 100 g
walnuts 50 g
rast. mold oil
shape 10 * 20

Cooking method

  • Make strong coffee. Dissolve sugar and honey in it. Cool slightly.
  • Mix the sifted flour with baking powder. Add coffee gradually, stirring well. The dough will turn out like thick sour cream. Add prunes and coarsely chopped nuts.
  • Grease the form with vegetable oil. Lay out the dough and flatten.
  • Bake the muffin at 180 ° C for about 40 minutes in a preheated oven (be guided by your oven). Cool the cake on the wire rack.
  • Sprinkle the finished cake with icing sugar.
  • Bon Appetit!

Note

A fragrant moist, slightly "stringy" cake, very similar to a honey gingerbread. For a richer aroma and taste, cloves and cinnamon do the trick. But these are notes for the future.

I was flattered by the word FAST and baked, the dough did not rise, not loose and porous as in the photo. The only thing that saves this cake is the filling itself, in fact it is like prunes with nuts with a tiny amount of dough.
Has anyone else baked it?
