Pastila strawberry Tenderness

Ingredients

Sugar 250 g
Corn glucose 38 g
Water 75 ml
Protein 3 pcs
Sugar 1 tbsp. l.
Strawberry puree 75 g
Lemon juice 2 tbsp. l.
Flavored flower water (optional) 1.5 tbsp. l.
Gelatin 11 g
1 tbsp. l. powdered sugar + 1 tbsp. l. starch
Form 24 x 4 x 27 covered with baking paper

Cooking method

  • On the English-language site, this dessert was called marshmallow, but I took the liberty of calling it marshmallow, although it is much softer and more airy than the last one! Be that as it may, the dessert turned out to be really tasty and was eaten very quickly! I really liked the combination of a melted piece of marshmallow and hot chocolate, in my opinion, on a cold chilly evening this is what you need !!!
  • Soak gelatin in cold water.
  • Wash and dry the strawberries (defrost)
  • Puree in a blender and rub through a sieve.

  • Place sugar, glucose and water in a saucepan, stir and cook over medium heat, stirring constantly, when the syrup reaches a temperature of 116-118 ° C, remove from heat.

  • If there is no thermometer, then we cook the syrup using the soft ball method, dropping a drop on a saucer and checking it with our hands after cooling.

  • In parallel, beat the whites with sugar until fluffy.
  • Constantly whisking the whites with a whisk, introduce a very thin stream of hot syrup.
  • Beat with a mixer until crisp and smooth.

  • Add squeezed gelatin and mix well.
  • Then add strawberry puree, flower water and lemon juice in three steps.
  • Stir well with a spatula.
  • Pastila strawberry Tenderness
  • Pour into a mold and place in a cool dry place for 10-12 hours.
  • Pastila strawberry Tenderness
  • Sprinkle the surface with a mixture of powdered sugar and starch, free the marshmallow from the mold and paper and cut into 3 x 3 cm cubes with a dry hot knife.
  • Pastila strawberry Tenderness
  • Dip in a starch-sugar mixture and enjoy!

What a miracle! And it's not difficult!
Natasha, what is corn glucose and where is it taken and what can be replaced ??? How much marshmallow comes out? what shape is the size? Thank you!
Ilona
Oh, what a BIG THANKS for the recipe !!!! : girl_skakalka: The post will end right away! Everyone loves marshmallows and marshmallows so much, and I had no idea that such a miracle can be done at home by yourself, and even adjust the sweetness to your taste (store och. Often too cloying). Oh, I'm really happy to see this recipe! Everything, dragged him to the "piggy bank". Now, until mid-April, you need to get hold of corn glucose somewhere, I also don't know what it is and where it comes from, but I have already met it somewhere on our forum. Someone said that you can replace the usual one, but I don't know if this is so and, if so, in what proportions is the replacement taking place?

Thanks for the recipe! Tell me, at what temperature and how long can such a candy be stored?
natapit
Thank you all very much for your feedback!
I can't tell you anything about replacing corn glucose in this case, maybe it's better to replace it with very light honey?

As for storage - store in a cool dry place, I didn't live up to storage, they ate it quickly!

Natasha, I think, can I use pureed strawberries frozen with sugar?
After defrosting, it is already like a thick puree with syrup.
Accordingly, there is no need to add sugar ...
An interesting recipe.
AlenaT
Yes, but why add starch to the dressing?
Will it not be felt on your teeth?
natapit
of course you can also frozen! only add sugar when we cook the syrup! starch protects from moisture and is not felt on the teeth!
AlenaT
Mmmm, I have grated strawberries with sugar 1: 2. (((
Okay, let's think of something ...
natapit
75 grams of mashed potatoes will not do any weather, especially since the marshmallow turned out to be not sugary! add 1 more tbsp. l. lemon juice

Natasha, where do you buy corn glucose in Athens? Or can you find it in any supermarket?
Please write what it is called in Greek
natapit
I buy in the supermarket in the section that sells jam! currently I use the brand Daily sweet - σιροπι γλιρκοζισ - it is a rather economical 400 gr jar costs up to 2 euros

Pastila strawberry Tenderness
used to use - σιροπι γλιρκοζισ καλαμποκι - Hai brand. it costs almost twice as much. and this is the same thing!

Well, finally I got to this recipe. It turned out very tender and tasty. Instead of glucose, I took light honey, and my homemade frozen strawberries. I was afraid to do it, because even the protein custard has never been tested by me in cooking (and the technologies are similar), but everything, as I think, worked out!
