Choux pastry herringbone

Ingredients

Choux pastry
Water 1 glass
Butter or margarine 100g
Salt a little bit
Flour 1 glass
Eggs 3 pcs
Glaze
Egg white 70g
Powdered sugar 400g
Lemon juice 1 tsp
Dye green a few drops
Coconut flakes

Cooking method

  • Cooking choux pastry
  • Pour water into the container, add salt and oil. We put on fire. Bring to a boil. Add flour and knead until smooth.
  • Choux pastry herringbone Choux pastry herringbone
  • Let the custard cool down to 65-70 degrees, or just when the mass becomes warm. Add one egg at a time, stirring well into the dough each time. The first photo, what the custard looks like. Second, this is what the dough looks like when it is ready to go.
  • Choux pastry herringbone Choux pastry herringbone
  • We spread the mass in a pastry bag with a nozzle, the diameter of which is 4-5 mm. We start drawing our snowflakes. I did it without a stencil, but you can draw snowflakes of the shape you need on parchment. Each snowflake should be 0.5 cm less in diameter than the previous snowflake (information from the original source Yakhontovaya). I baked several pieces in an airfryer. Can be baked in the oven. Snowflakes are baked at a temperature of 200-220 degrees for 10-15 minutes until golden brown.
  • Choux pastry herringbone Choux pastry herringbone
  • Snowflakes should be well baked, dryish, and not soft like on eclairs. Then you need to let them dry well just on the table. This is necessary so that when coated with glaze, they keep their shape well. I left them overnight and only in the second half of the next day began to cover them with glaze.
  • Cooking the icing
  • It is essentially liquid icing.
  • Stir the egg whites slightly (do not beat) and gradually add the icing sugar, constantly mixing it into the whites. The first time I fell asleep somewhere 30 grams of powder. Stirred. Then she mixed it and added the icing sugar until the mass became like a medium thick sour cream. For me, a sign that sah. there is enough powder, there is a shine on the surface of the mass when you leave it alone for a few seconds. Add lemon juice, mix. Add dye and mix.
  • Choux pastry herringbone Choux pastry herringbone Choux pastry herringbone Choux pastry herringbone Choux pastry herringbone Choux pastry herringbone Choux pastry herringbone
  • Now it remains to cover our snowflakes with glaze. This can be done in several ways. Dip the snowflakes in the glaze. Cover with a brush or sprinkle with a spoon, holding the snowflakes in your hand over the container of icing.
  • But first we prepare a tray with a grate on which we will lay out snowflakes. Extra glaze will drain from them. Also, if you need to sprinkle snowflakes with coconut, then tint it in advance, dry it and put it somewhere nearby so that you can use it. Sprinkle with coconut until the icing has set.
  • Choux pastry herringbone Choux pastry herringbone
  • I want to draw your attention to the fact that if for some reason a part of the snowflake breaks, then it is quite possible to put it on a toothpick. Thanks to the glaze, the broken paw will hold well. (information taken from the original source)
  • Choux pastry herringbone Choux pastry herringbone
  • At first, I covered the snowflakes with icing on both sides. But then she began to cover only the top.
  • I would also like to add that during the coating of all the snowflakes with glaze, it becomes denser and it becomes more difficult to work with it. Therefore, throughout this time, I added a few drops (1 \ 2 h. L) of boiled cold water. Mixed well.
  • My snowflakes dried for 3-4 hours.
  • We collect the tree
  • A few days before assembling the Christmas tree, we make such blanks. They are made in the form of a cone of gelatinous mastic and a wooden skewer.
  • Choux pastry herringbone
  • We drown the chocolate and spread it on the mastic blank first, and then spread it between the snowflakes. Place the snowflakes so that the paws are one between the other.
  • I want to draw your attention to the fact that when we draw snowflakes, a thickening forms in the middle of it, which rises well during baking. When assembling a Christmas tree, this tubercle serves as a good addition so that one snowflake does not lie close to another.
  • When a snowflake is pierced with a skewer, you need to gently hold it on your hand. If possible, holding the bottom with your fingers, exactly the middle. The snowflake pierces easily. At the same time, the glaze remains intact. But this is when drying for 3-4 hours. If you dry more it is possible that it will crack. Therefore, you can pierce the snowflakes after a few hours of drying the glaze, and collect when you need it.

  • And now our Christmas tree is ready. Bon Appetit!!

Note

Natalia Yakhontovaya from the forum became the primary source and inspiration for me 🔗
From this number of products, I got two Christmas trees 12-13 snowflakes each. There is just enough glaze for this amount. But I covered it only on top of the snowflakes. The height of the trees together with a mastic stand is 28cm. The bottom diameter of the snowflake is 16cm. Further, each snowflake goes 0.5 cm less in a circle.
And I will also add some information on choux pastry. That is to say, a theory that is very necessary for practice.

If there are no voids in the choux pastry, then there are several reasons for this.
1. Liquid dough consistency. (bust with eggs or water)
2. Using flour with low gluten. (The% content of strong gluten should be 28-36%. That is, the flour should be of the highest grade)
If the flour is of low quality, it is recommended to add ammonium, which helps the dough rise and forms cavities.
3. Strong lubrication of the baking tray on which the choux pastry was baked. This results in a torn surface on the bottom of the product.
And I will add a little general information on this test.
The choux pastry dough must be viscous in composition and must have enough moisture. The moisture content of the dough should be 52-54%.
You need to bake choux pastry products for the first 10 minutes at a temperature of 220 degrees, (at this time, the dough sets with a crust) and then the remaining baking time is 20 minutes, at a temperature of 200-210 degrees. (The dough begins to rise, there is a lot of moisture in it. The resulting crust does not allow moisture to come out and therefore swells the dough, forming cavities. The moisture gradually evaporates during baking.)
When mixed into the custard, eggs are added at a temperature of 65-70 degrees. This information is for those who have thermometers. Well, I just taste the dough with my finger and if it is already warm, then I add it.

How is there such beauty? The hand will not rise ...

I can't believe my eyes - how is that ?! I want to try and do not know how to create it) but how much in advance can I do?
Natusik
husky, WOW !!! What a charm, beauty and deliciousness !!!!!!!!!!!!!!!!!!!!
Keti
What beauty! And if you still attach toys ... then that's all
Elya_lug
Husky, what a beauty!!! I also look at it and want to do it. But one more question haunts me: Is it possible to transport such a Christmas tree? How stable is the stand for this? It's not a shame to go with such a person
Summer resident
Husky, you are the best as always !!!
celfh
Husky,
MariV
Oh, this is a masterpiece!
Husky
Thanks everyone !! I also really like the Christmas tree. But she has a way to go in the near future. The Christmas tree is meant for a gift.
Elya_lug, so let's see how she will transfer the road.
I packed it like this.
I took a backing for the cake (cardboard whose diameter is larger than the diameter of the tree). I dripped melted chocolate into the middle and glued the base of the gelatin Christmas tree to this substrate. I inserted a foam insert under the paws of the Christmas tree, which is located between the substrate and the lowest snowflake. Then I took a film for flowers and collected it in a knot above the tree. Tied with a bow.The film does not seem to touch the tree anywhere. I hope that in this form it will safely reach its owner. When transporting, I will try to pick up either a box or put it in a gift bag.
About storage. The first test tree, I made a week ago. I collected, looked, disassembled and put all the snowflakes in a cardboard box. Yesterday I climbed in to report more snowflakes and saw that two things (the previous ones) were not covered with glaze. And I was terribly hungry (I still have no time to eat, even though I am at home), so I ate both of these snowflakes. I was extremely surprised that they were exactly the same as I baked and DRY them. They were not covered with glaze yet. They taste like we buy dry sticks (I don’t remember what they are called. So chubby) I didn’t feel any extraneous odors or any aftertaste. And if they were glazed, then all the more they would have nothing. The glaze also dries very well.
By the way, you can and should decorate. But since I have to carry her, I was afraid to cling to excess weight on the branches. And I will definitely decorate my home with mastic bows and chocolate balls. And I will definitely make beads. (dreaming is not harmful! where else would you find time for yourself)

husky : bravo: I never stop admiring your talent!
Baikalochka
The beauty!!! it is necessary to take note !!! and if the shavings are not painted, how will the snow on the branches be or will it be painted over from the glaze?
Husky
Baikalochka, also an idea with white coconut flakes !! No, it will not touch up at all, since it does not sink into the glaze, but lies on its surface.
Vitalinka, I do not have time for everything. I can't insert a photo of the cakes, since I did not comment on the cakes of others. And I don't have time to comment!
Vitalinka
Lyudochka, and you put out your cakes, we will at least admire them!

Lyudochka, as always, I am just delighted !!! WELL DONE!!! I also want to do it.

Lyudochka is such a fluffy Christmas tree: bravo: but you need to have patience to do it, I don't have it: nea: and you have a GREAT RESPECT. smart girl !!!

Husky, Bon voyage to the Christmas tree (Sori, I don't know French). I have an idea to use a foam stand, fix a skewer in it, a napkin and a Christmas tree on top, so that the lower paws lie straight on it.
Today I saw popcorn. I think it's good to use it. It's lightweight, to tint, there will be a garland.
Husky
Yes, exactly, you can do that. I also think about attaching my tree to my cake. That is, I'll stick a skewer into the cake itself. I will put a piece of brown mastic on it and put on snowflakes on it, where holes will be made in advance.
And for the popcorn, I'll run you, thank you !!

husky, Lyudochka, I am suffering about this tree for 2 months ... I saw it as I saw it, I just "got sick" with it ...
But I saw it in a different version, and this one .. on my own forum, and even described by a person whose opinion and experience you already trust unconditionally!
Thank you so much !! :)

Here I thought, but if the Christmas tree is smeared with wet meringue. Will it then dry up and be snowy? There is simply no dye, and I don’t know how to buy them at all, especially since they are not sold like in Russia. But I was on fire to make one.
Lady with @
So it is not necessary to paint the icing in green, you can leave it white and sprinkle it with white coconut ... And there will be a white-white Christmas tree, namely winter)

I thought the same thing ... but won't the top of the snowflakes get wet? then they will break or will not keep the shape ...

Yes, yes ... Judging by the prepared stands, did you get 3 Christmas trees? What are its parameters?

Marmalade can be attached with melted steep jelly or, theoretically, warmed up with the same marmalade.

Lyuda, I looked at your tree and kept saying to myself "I DON'T WANT! I DO NOT NEED IT !!!" And now ... it is necessary. Tell me how much it can be done before the presenting. And if you make it in advance, will it still be edible? I know. that the choux pastry does not last long.

Husky
Oksan, in the store we buy such long dry blown sticks, like biscuits. Not flat, but dry. So these snowflakes in a well-dried state are very similar in taste to these sticks. Today I will eat another snowflake covered with glaze, from those that I did for the first time. If after a while I get in touch, then you can start making your own Christmas trees.
Custard cakes really spoil very quickly if they remain wet inside. And these are dried almost to the state of a roach.
Girls, if you know how to bake custard cakes and you get this dough, then do not even think, bake. It is so easy to manufacture and assemble that it simply cannot be screwed up and made. It is dreary just to cover it with glaze. Not difficult, just long and everything around is dirty from dripping and flowing glaze. I was tired of just washing my hands after each contact with the glaze. I can’t do anything if there is something on my hands or they are wet.

Husky, I have a question. There is poorly ground powdered sugar (and in a huge amount of 10 kg! - I bought it unsuccessfully).
Can it be used for such glaze? What do you think?
