Pumpkin-coconut cookies

Ingredients

pumpkin puree 1 stkn
coconut flakes 4 tbsp. l.
granulated sugar 3 tbsp. l.
butter (or margarine) 50 g
chicken egg 1 PC
baking powder 12 g
vanilla sugar 5 g
flour about 400 g
(it took me less)

Cooking method

  • Peel the pumpkin, cut (I diced), bake until soft in the oven (I baked it in the microwave).
  • Purée the pumpkin (in any way; I did it with the help of the Zepter Mixi).
  • Separately grind softened butter with sugar, add egg, vanilla sugar, coconut, then add pumpkin puree and mix. I did not cool the puree.
  • Then add flour mixed with baking powder and knead not steep, soft dough. We form balls from it, put them on a baking sheet covered with parchment, and bake for 25-30 minutes. at a temperature of 180oC.

Time for preparing:

about 60 minutes (with all preparations)

Cooking program:

baking in the oven or in the microwave

Note

The cookies are soft, fragrant. On the 2nd day it was also mild.

I baked your cookies (though for me they are small buns), added an extra spoonful of sugar and raisins on my own. The family liked it, tomorrow I'll bake it from the leftover pumpkin

here otchetik compensated for the lack of sugar in the dough with a sprinkle of powder and still ours said that they were not sweet
