It is corrugated aluminum that is important.
I respect the non-stick coating only for the Neva-Metal Titanium and Diamond series.
In aluminum, even when it is scratched during frying, the damaged oxide film is immediately restored. But why scratch a frying pan with a knife? There are many different flipping paddles.
It is possible to cook in an aluminum dish, but it is undesirable to store it, especially if there is acid in the finished dish (tomatoes, tomato, vinegar). The acid destroys the oxide layer. But I try to cook once, and if there is something left, I transfer it to Tupper containers or bowls for storage.
