Guvette made from meat and orzo pasta

Ingredients

meat (boneless) of your choice: pork. veal or lamb 700 gr.
orzo pasta (Greek name for krifaraki) 500 gr.
fresh and very ripe tomatoes (peel and coarsely grate) 400 gr.
large onion (grate on a coarse grater)
garlic (coarsely grated) 2 teeth
cinnamon stick 1
olive oil 3-4 tbsp. l.
salt, black pepper; grated cheese for serving

Cooking method

  • In a large saucepan, fry the meat on all sides in olive oil for 5 minutes.
  • Add the grated onion and garlic and cook for another 5 minutes.
  • Add the tomatoes and, when they boil, pour in one and a half liters of water. Add cinnamon. salt and pepper. Cook until the meat becomes tender - by this time the liquid should have almost halved in volume. Top up with water as needed so that the liquid in the pan becomes about one and a half liters. Boil.
  • Preheat oven to 200 ° C. Remove the cinnamon. transfer the contents of the pot to an ovenproof dish and place in the oven. When the liquid boils, remove from the oven and add the orzo paste.
  • Mix well and place back in the oven. Stir again after 5 minutes. Leave in the oven until all the liquid is absorbed.

  • can be served. if desired. sprinkle with your favorite grated cheese. if possible. then the Greek "Kefalotiri" (I did not sprinkle).
