I bring a "thank you" to the author I did it strictly according to the recipe, rolled it out directly on the parchment with a silicone rolling pin (on the same sheet several cakes) very thinly, did not sprinkle the parchment with anything and did not grease it. I will not say that the dough was plastic, it rolled unevenly, as if in islands (I said it), but the beauty is that you could easily cut off a piece that went beyond the drawn circle on parchment, put it in place of the clearing and roll it out. In general, I got 8 soooooo cakes. Both hot and cold were separated from the parchment at once. The cream was a leapfrog. I decided not to fantasize and make a custard sour cream. But ... I separated it into cream and liquid. As a result, when I whipped cream with butter, it turned out very little. It was lazy to cook another portion, I added 200 gr. mascarpone and 200 gr. whipped cream. It turned out divinely delicious!
