Mashed potatoes with anchovies

Ingredients

Boiled potatoes 2-3 pcs.
Olive oil 2-3 st. l.
Green onion 2-3 pcs.
Anchovies - finely chopped
instead of anchovies I used capelin fillet
cold smoked
2-3 st. l.
Salt taste

Cooking method

  • Boil the potatoes with salt to taste.

  • While the potatoes are boiling, peel the capelin, make fillets, cut the flesh of the fish from the skin. Finely chop the fish into pieces.

  • We take the potatoes out of the water, knead them coarsely with a fork, pour olive oil over the hot potatoes, add chopped green onions, anchovies (capelin), mix gently.

  • Mashed potatoes are ready! Can be served as a side dish.

I was sitting, not bothering anyone, and suddenly I read in the book of Alexander Genis: “I like the custom of seasoning an unleavened dish with anchovy. This is how our favorite mashed potatoes are prepared, where along with grated onions, olive oil and wine vinegar, anchovy paste or mashed sprat is added ”

All! That was enough for me!
Nearby in the store I found a fat pretty cold-smoked capelin. Instead of raw onions, I put green aromatic onions in mashed potatoes. I didn't add vinegar.

And why didn’t I figure out how to cook this delicious mashed potato with anchovies, that is, smoked capelin, myself!

By itself, having a rather unassuming taste, after salting the anchovy literally transforms - the spicy, piquant, and at the same time recognizable aroma that anchovies give to the dishes, made them a favorite ingredient in many cuisines. So, anchovies are used in the preparation of sauces, snacks. You can replace it with a spicy salted sprat. You can also replace the anchovy with Thai or Vietnamese fish sauce.
